BWJ - Mocha Chocolate Chips

They may not be the prettiest things but they were pretty tasty!

I made just a 1/4 batch of these Mocha Chocolate Chips because I don't need 4 dozen chocolate anythings hanging around here. I also left out the apricots as that just seemed a little odd.

Most of the batch was frozen and it was great I could eat them straight from the freezer as they didn't go rock hard.

So that's about it! Probably wouldn't make them again but they did disappear pretty quickly which is always a good sign.

BWJ - Boca Negra

I'd never heard of a Boca Negra cake before so was curious to see how these would turn out. Well, let me just say that a Boca Negra cake is the most intensely chocolatey cake I have ever made. Ever.

We don't do bourbon in this house so I subbed in some coffee instead and also went for a lightly sweetened whipped cream to serve. OMG. So rich, soooo delicious.

I'm very glad I did just 1/4 of the recipe, using my little heart shaped springform pan which only sees the light of day for Valentine's Day.

So my 1/4 recipe used 100g dark chocolate (I used Lindt 85% cocoa), 1/3 cup sugar, 1 tbs strong coffee, 60g butter, 2 eggs and 2 ts plain flour. It baked for around 22 minutes and was just right. At room temperature it was silky and luscious, out of the fridge later it was like fudge.

The kids each had a bite and hubby and I polished off the rest. YUM.

Tuesdays with Dorie: Coffee Break Muffins

I'm not sure if you can tell from the photos but these muffin cases actually have little coffee cups on them. Which makes them perfect for this week's Coffee Break Muffins chosen by Rhiani of Chocoholic Anonymous.

We had a garage sale on the weekend and had a bit of a working bee last Wednesday to prepare. What better pick me up than a coffee break muffin for morning tea!

I always replace the espresso powder (which I've never found here) with regular freeze dried instant coffee and I did the same thing here without thinking. This resulted in a lovely speckled muffin but I think hubby was little disappointed the speckles weren't chocolate!


The taste test ...

I'm a decaf drinker but I really enjoy coffee flavoured desserts and these muffins were no exception. Lucky I made a full batch because they disappeared really quickly. Definitely a winner.

Daring Bakers February - Tiramisu

This month's Daring Bakers' challenge was called 'heaven on a dessert plate' and boy was it ever!

The official lines - The February 2010 Daring Bakers’ challenge was hosted by Aparna of My Diverse Kitchen and Deeba of Passionate About Baking. They chose Tiramisu as the challenge for the month. Their challenge recipe is based on recipes from The Washington Post, Cordon Bleu at Home and Baking Obsession.


I've never really been a fan of tiramisu but I know now that's only because I hadn't tasted the real deal. Apart from the light-as-air ladyfinger biscuits the filling for this version contains four different elements - homemade marscapone, zabaglione, vanilla pastry cream and whipped cream. Whew. No wonder it tastes so good!

The homemade marscapone was a revelation. Never again will I buy marscapone knowing just how easy it is to make and how delicious. We're not keen on marsala so I flavoured the zabaglione with coffee which resulted in a wonderful latte coloured cream. The hint of lemon in the pastry cream worked beautifully with the coffee flavours.





The taste test ...

Oh. My. God. Absolute perfection. I think I uderwhipped the cream so the filling was a little soft but otherwise this truly was heaven on a plate. I won't bother ordering it at a restaurant, I don't think it could ever match up to this!

Tuesdays with Dorie: My Favourite Pecan Pie

I have to admit I wasn't that excited about making pecan pie this week. I've been in Christmas baking mode for weeks now and have been snacking on lots of goodies. Pecan pie is SO sweet that just the thought of it made me want to eat a truckload of veges.

BUT this pecan pie is a little bit different. First of all there is way less sugar/corn syrup than in some versions plus it has a few extras like chocolate and coffee powder. To boost the chocolate factor I decided to do a chocolate crust as well (using Dorie's Chocolate Shortbread Tart Dough from p 476 of Baking).

The taste test ...

Oooh boy, this is one hell of a pecan pie! While it's definitely rich it's not too sweet, with the coffee and chocolate notes providing the perfect balance. The chocolate crust was fantastic! It got a little browner than I planned (but not at all burnt even though it appears that way in the top photo). We served it with a big scoop of Cappucino Indulgence icecream. Yummmmmm.

Coming after one of the best Sunday dinners I think I've ever made (chargrilled Angus beef with avocado bearnaise sauce and mashed potato), it was a wonderful end to a great weekend!

Tuesdays with Dorie: Espresso Cheesecake Brownies

Being on a bit of a brownie bender at the moment I was happy to see another brownie pick this week. And the fact that these were cheesecake brownies was just another reason to smile! I seem to be leaving TWD to the very last minute these days. I whipped them up about 2pm today and got my photo out on the verandah in the last few moments of daylight.

The taste test ...

Boy, these were rich! A big thumbs up from my number one taste tester but he's right, you definitely can't have more than 1 piece at a time. I did make the sour cream topping intending to serve it on the side but to be honest they don't need anything else.

Cappuccino Brownie Bites

Oh brownies, you have completely sucked me in with your dense, fudgy texture and amazing chocolately taste. One bite and I am immediately thinking of other flavour combinations to make you even more mind-blowingly delicious.

Although you are all gone now, we shall be meeting again soon little cappuccino brownie bites. Indeed we shall ...

Cappuccino Brownie Bites
Adapted from Brownie Buttons on p106 of Baking from My Home to Yours

1/4 cup plus 2 tablespoons plain flour
Pinch of salt
60g butter
60g dark chocolate, coarsely chopped
1/3 cup (packed) light brown sugar
1/2 teaspoon pure vanilla extract
1 large egg
1 heaped teaspoon instant coffee dissolved in 1-2ts boiling water

Preheat the oven to 180 degrees C. Lightly butter a miniature muffin pan. Whisk together the flour and salt. Melt the butter, chocolate and brown sugar in a medium heavy-bottomed saucepan over very low heat, stirring frequently with a heatproof spatula and keeping an eye on the pan so nothing overheats or burns. When the mixture is smooth, remove from the heat and cool for a minute or two.

Stir in the vanilla, egg and coffee into the chocolate mixture. When the mixture is well blended, add the flour and stir only until it is incorporated. You should have a smooth, glossy batter.

Spoon the batter equally into the muffin cups (they will be almost full). Bake for approx 14 minutes or until the tops of the buttons spring back when touched. Transfer the pans to racks to cool for 3 minutes before carefully releasing the buttons. Cool to room temperature on the racks.

Topping - whip 1/2 cup pure cream with 1 tbs icing sugar until peaks form. Use a piping bag to pipe onto the top of each brownie bit. Sprinkle the tops with cocoa.
