I am a HUGE fan of slow-cooked meals.

Being able to get dinner prepped and out of the way in the morning is a brilliant time saver in our busy household, it doesn't heat up the kitchen like the oven does and bonus, slow-cooked meals taste amazing!

Our slow-cooker is used at least a few times a week, even in summer.

I do a batch of bone broth once a week, along with slow-roasted chicken, lamb chops and even stewed fruit.

This sticky pineapple pulled pork is the perfect slow-cooked meal for hot weather.

Pulled pork is wonderful on tortillas or baked potato/sweet potato with a zingy fresh coleslaw or with rice and steamed greens.

My version uses fresh pineapple to create a sticky but not overly sweet sauce that pairs beautifully with the pork.

For maximum flavour you can rub the pork with the honey and spices and leave in the fridge overnight to marinate. Honestly, I am not usually that organised and it's delicious even when freshly made in the morning.

We only have a pork a few times a year so it's a treat for us. Make sure you save the rind for crackling!

Sticky Slow-Cooked Pineapple Pulled Pork

1 x 2kg boneless pork shoulder
1 whole sweet pineapple
1 red onion
1 red chilli (uses as much or as little chilli as you like - 1 small chilli is good for my kids)
2 tbs sweet paprika
1 tbs honey
3 ts cumin
3 ts oregano
3 ts pink salt
2 ts onion powder
2 ts garlic powder
1/2 ts cinnamon

Peel and roughly chop the pineapple and onion, and place them into the Thermomix or food processor along with the chilli and puree until smooth. Pour the mixture into the slow cooker.

Remove the skin and fat from the pork using a very sharp knife, and either discard it or save for crackling.

Place the pork into a large baking dish.

Mix together the honey, spices and salt.

Rub the mixture over the pork until it is thoroughly coated.

Place the pork on top of the pineapple puree. Pop on the lid and cook on low for 8 hours.

Use 2 forks to pull the pork meat apart and mix through the sauce.

Smoky BBQ Pork Ribs


These smoky pork ribs were a seriously delicious dinner! I actually made these for Fathers' Day way back at the start of September and then with the move forgot to post them. Now there are probably thousands of rib recipes out there and I must have looked at dozens before deciding to just wing it and make something up myself. I didn't want anything too spicy and I didn't want to buy weird ingredients like liquid smoke.

While I'm all for making things from scratch I did use bought sauces for this, namely the Fountain Good Choice tomato and barbecue sauces which I reviewed earlier this year.

I wasn't able to find the American style ribs anywhere (admittedly I left it until the last minute!) so used these Aussie pork spare ribs instead and they worked just as well.

The cooking is done in three stages. First they are left to marinate in the fridge overnight which starts to tenderise the meat, then they are baked in the oven and lastly they are grilled and basted with marinade which makes them charred, sticky and luscious. So good!


I served the ribs with coleslaw, avocado, homemade potato wedges and corn on the cob. Hubby and kids all loved it and there lots of sticky smiles and licked fingers.

Remember to start this recipe a day ahead!

Smoky BBQ Pork Ribs

1/2 cup BBQ sauce
1/2 cup tomato sauce
1/2 cup apple cider vinegar
1/2 cup coconut sugar
4 cloves garlic
2 ts smoked paprika
2 ts mustard powder
salt and pepper to taste

1.5 kg pork spare ribs

Combine all marinade ingredients in a large dish and combine well. Add the pork and mix well, massaging the sauce into the meat. Cover the dish with 2 layers of plastic wrap and leave in the fridge overnight.

Preheat the oven to 150 degrees celsius, Line a large baking dish with foil and place a rack on top. Lay out the ribs on the rack, reserving the marinade, season with salt and pepper and cover with foil.

Bake for 1 1/2 hours, turning and basting with marinade every 20 minutes or so.

Meanwhile tip the remaining marinade into a small pot and bring to the boil for a few minutes, until it has reduced and thickened.

Increase the oven temperature to 200 degrees. Remove the cover from the ribs, brush with extra marinade and bake for another half an hour, turning and basting again halfway OR cook the ribs on a barbecue grill over a flame, turning and basting every 5 minutes or so (this will give best results!).

Remove from the heat and allow to rest for 15 minutes before serving.

Fantastic Cuban Sandwiches (SRC)

It's Secret Recipe Club time again and that means all my fellow Group Ds are revealing their chosen recipes today! This month I was really excited to be assigned Making Miracles by Rebekah. If you haven't checked out Rebekah's blog yet you really should because this woman is AMAZING! Rebekah has been a surrogate 3 times since 2006 (and currently on pregnancy #4) and started her blog to keep a record of her surrogacy experiences. Since then it has definitely evolved to include her own family and lots and lots of food!

I love the names of her recipes too, it makes them really hard to resist - how about some Amazingly Easy and Delicious Ham and Potato Soup, Emergency Chicken or the Best Steak Marinade in Existence?

I nearly went with the Bacon-Wrapped Potato Wedges but in the end though the Fantastic Cuban Sandwiches won me over not only because they sounded absolutely delicious, but because I remembered seeing the movie Chef  last year (did anyone else see it? we loved it!) which was all about Cuban street food including the famous el sandwich Cubano!

This is a super easy meal which takes only minutes to prepare and then the slow-cooker does all the work for you. I use my slow-cooker a few times every week so this was perfect for us. Every time I cook meat like this I wonder why I don't do it more often because it's just SO good! Tender, juicy and packed with flavour.

The house smelt amazing all day while the pork was cooking and when it came the taste did not disappoint! I don't eat dairy and I did feel like I was missing out a bit without all that luscious melty cheese but it still tasted fantastic. We all loved these and even better, because I did such a big roast we had lots of leftover pork for lunch the next day and froze the rest for another dinner a week later.

Fantastic Cuban Sandwiches
Recipe from Making Miracles

For the roast:
1 x 2kg pork shoulder (this makes lots of leftovers)
6 cloves garlic, finely minced
1/4 teaspoon black pepper
2 ts oregano or marjoram
2 tbs olive oil
2 tbs white vinegar
3 ts salt

For the sandwiches:
Long bread rolls
Sliced Swiss cheese
Sliced ham
Sliced pickles
Honey mustard
Mayonnaise 

To prepare the roast, combine all marinade ingredients together and rub over the pork before covering well and leaving it in the fridge overnight. The next morning place in your crock pot on low for 8-12 hours (mine had about 10 1/2 hours and was perfect).

To assemble the sandwiches, slice the rolls in half and spread a thin layer of the mustard and mayonnaise on the insides. Layer the cheese, ham, pickles and roast pork on one half. Top with another slice of cheese and then the other half of the roll.

Press sandwiches in a panini press until bread is crispy and cheese is melted, about 3-4 minutes on medium-high heat.

Slow Cooker Pulled Pork

It's funny how tastes change. Up until a couple of years ago I had a major sweet tooth and really wasn't a fan of chilli. Now though, give me spicy food any day, and I can take or leave dessert (although I always have room for ice cream!).

In fact I'm getting hungry just thinking about this amazing pulled pork! And on a rainy cool day like today I'm wishing this is what we were having for dinner tonight.

This  is such an easy and budget-friendly recipe. While the pork shoulder may cost a bit it will feed an army and I tend to have all the other ingredients in the pantry already. You can add as much or as little chilli powder as you like or use fresh red chillies if you have them.

The house will smell amazing during the day and the end result is the most succulent, flavourful, amazing piece of meat. I like it served on a roll with a really fresh and zingy coleslaw to balance out the richness of the meat. It will be messy but it's so worth it!

Slow-Cooker Pulled Pork

1 x 1.5kg pork shoulder, skin and excess fat removed
1 onion
6 cloves of garlic
2 ts - 2tbs chili powder
1 tbs paprika
2 ts pepper
1 ts cumin seeds
2 ts salt
1/4 cup coconut sugar
3 tbs Worcestershire sauce
2 tbs dijon mustard
3/4 cup white vinegar
1/3 cup homemade tomato ketchup
1 bay leaf

Combine all ingredients except the pork and bay leaf in the food processor and blitz until smooth and thoroughly combined.

Place the pork into your slow cooker, pour over the marinade mix and add the bay leaf. Cover and cook on low for 8 hours.

To serve - remove the pork from the slow cooker then pour the liquid into a saucepan. Bring the liquid to the boil then simmer for 10-15 minutes until it has reduced by at least half.

Using 2 forks, pull the pork into shreds then add the meat to the reduced sauce and stir to combine.

Serve on top of a hot buttered roll with plenty of zingy coleslaw. Devour.

Quick Macaroni and Cheese

This to me is the ultimate in comfort food and this version is quick and easy. We had this last night with pan fried pork steak on the side. No veggies as we were too lazy!

Quick Macaroni and Cheese

500g macaroni
1 tin of tomato soup
1 tin's worth of chicken stock
1 tin's worth of milk
1 onion, chopped finely
2 cloves garlic, crushed
50g butter
2 heaped tbs plain flour
2 cups grated cheese (gruyere, a sharp cheddar or a combination of both work well)

Cook the macaroni as per packet directions until just done, drain and return to the pan (off the heat). Meanwhile, prepare the sauce. Combine the soup, stock and milk and stir well, Set aside.

In a frypan melt the butter and when it starts to foam add the onion and garlic. Saute until translucent and fragrant. Add the flour and cook, stirring continuously for 2 - 3 minutes.

A little at a time, pour the soup/stock/milk mix into the pan, stirring continuously to prevent lumps. Continue until all the liquid has been added. The sauce will thicken quite a bit. Taste and season with salt and plenty of pepper.

Pour the sauce over the macaroni and stir to combine. If you want to eat straight away, add the cheese and stir over low heat for a few minutes until hot and melty. Alternatively, add about half the cheese and stir well, then pour the mix into a large baking dish and cover with remaining cheese. Add a generous sprinkle of paprika and bake at 220 deg C for about 20 minutes or until bubbly and golden brown.

Great served with a side salad or just on its own!
Serves 6.

Spiced Meatball Wrap


This was a really yummy dinner and a great alternative to tacos or burgers. It's also pretty healthy because the meat is baked not panfried and you can serve it with as much salad as you can squeeze into a wrap.

Spiced Meatball Wrap

Meatballs:
500g pork mince
500g lamb mince
1 thumb sized piece of ginger, grated
2 large garlic cloves, minced
1 ts ground cummin
1ts ground coriander
1 1/2ts garam masala
2 tbs rolled oats
1 egg, lightly beaten
1tbs plain yoghurt

Sauce:
1 ripe avocado
2 tbs plain yoghurt
juice of 1/2 lemon
salt and pepper to taste
handful of fresh coriander stems, chopped finely

To serve:
Flatbreads
Tomato
Capsicum
Any other salad greens you like

Preheat oven to 220 deg C.

Place all meatball ingredients in a large bowl and mix well to combine. I find you get a better result using your hands as it tends to turn to mush in a food processor.

Using wet hands, shape into golfball sized meatballs. You should get 12 meatballs from this mix which will easily feed 6 people. Place on a non-stick baking tray. Do this a few hours ahead of time if you can as the flavours will develop, then store in the fridge until you are ready to cook.

Bake for 25-30 minutes or until cooked through but still juicy.

Meanwhile, make the sauce by mashing the avocado and combining with other ingredients. This is basically a version of guacamole but it contrasts perfectly with the aromatics in the meatballs.

Serve with freshly chopped tomato and capsicum in a flatbread wrap with plenty of sauce.

Serves 6. Delicious!
