Gluten-free Banana Muffins with Cinnamon and Ginger

Anyone for afternoon tea? 


We love bananas at our place and always buy in bulk when we can.

Last week my hubby grabbed a 10kg box and of course, they all got ripe at once!

So I've been baking over the past few days and the rest are peeled and stashed in the freezer ready for smoothies or homemade ice cream.

And just FYI the same essential oils in this recipe whizzed up with frozen bananas and some coconut cream makes the most DIVINE ice cream!

GLUTEN FREE BANANA MUFFINS
with Cinnamon and Ginger essential oils

4 very ripe bananas (mine weighed 320g peeled)
2 large eggs
3 tbs liquid coconut oil
2 tbs coconut sugar
1 ts vanilla extract
1 cup gluten-free self-raising flour
1 drop Cinnamon Bark essential oil
2 drops Ginger essential oil

Preheat the oven to 160 degrees fan-forced.

Line a 12 cup muffin tray with paper liners or lay out some silicone muffin cases on a baking tray.

In a blender or Thermomix beat together the bananas, eggs, coconut sugar, coconut oil, vanilla and essential oils until smooth.

Fold through the flour until just combined.

Spoon mixture into prepared tin and bake for 15-18 minutes or until cooked through (the top will spring back when pressed lightly with your finger).

Cool on a wire rack. Makes 12-15. Great frozen for lunchboxes.

There are an incredible 37 doTERRA essential oils that can be used to flavour your food. I've used Cinnamon and Ginger here but the only limit is your imagination!

One-bowl Banana Bread


When I first got into cooking again as an adult I was all about trying new things, sourcing new ingredients and making every meal spectacular. I now have 3 young children and while I still want delicious food, my priorities have definitely changed!

What I look for now is - how long is this going to take me to make when I have a dozen other things I need to do right now? how many ingredients do I need to search for in the supermarket when I have a fussy, whingy toddler in the trolley trying to grab everything off the shelves? will my kids actually eat this or am I wasting my time?

One-pot dinners and one-bowl bakes - those words are music to my ears!

While I have made a hundred different banana breads this one is my simplest yet. Real ingredients, nothing fancy and just one bowl. Hallelujah.

I did this in the Thermomix (which to me is the epitome of one-bowl cooking) but a large bowl, a fork and a spoon will do the job just as well.

My husband scored a 15kg box of bananas for just $7 on the weekend so we have bananas coming out our ears at the moment. Most of these have been peeled and frozen so I am down to the last couple of bunches which are getting nice and brown and spotty, perfect for banana bread.

So here you go, the simplest wholefood banana bread around. This recipe is a keeper!

One-Bowl Banana Bread

3 ripe bananas (250g peeled)
2 extra large eggs
1/3 cup oil (coconut, macadamia or olive oil)
1/3 cup sweetener (rice malt syrup, honey or maple syrup)
1/4 cup milk (rice, almond or coconut)
1 1/2 cups wholemeal spelt flour
3 ts baking powder
1 ts cinnamon
pinch salt

Preheat oven to 170 degrees Celsius / 150 degrees fan-forced. Grease a loaf pan and line with baking paper.

In a large bowl mash the bananas, then add the eggs, oil and sweetener and beat together until smooth (TMX - 10 secs / SP 6).

Add the remaining ingredients and fold together until just combined (TMX - 10 secs / SP 3 - scrape down the sides and repeat if you need to).

Pour mixture into prepared pan and bake for 40-45 minutes or until it is golden brown and the tops springs back when you press lightly.

Remove from the oven and leave in pan for 5 minutes before turning out onto a wire rack to cool completely.

Delicious still warm from the oven or cold in lunchboxes.

Peanut Butter Banana Muffins

There are some flavour combinations that just work.

And peanut butter and banana is definitely one of the best!

While peanut butter gets a bad rap sometimes (and of course if you're allergic you should steer well clear), it's actually packed with protein, potassium, magnesium and good fat that will help keep you full.

My Mr 5 has lots of sensory issues to do with food but he has always loved peanut butter so it's a staple at our place. We buy tubs of freshly ground peanut butter from our local health store, that is made from 100% organic peanuts, nothing else added.

Staying away from commercial varieties which are full of added salt, sugar and vegetable oils is a good idea. Most supermarkets will have at least one brand of natural peanut butter so check the health food section and get reading those labels.

Apart from sandwiches we add peanut butter to smoothies, spread it on celery and top with sultanas to make ants on a log and serve with apple slices. And now we can add muffins to the list because these were delicious!

My boys absolutely devoured these - they couldn't get enough and ate 3 each for afternoon tea (and yes still ate dinner afterwards).

Banana Peanut Butter Muffins

1 cup wholemeal spelt flour
1 cup buckwheat flour
1 tbs baking powder
1/3 cup coconut sugar
pinch salt
2 ripe bananas
1/2 cup peanut butter
1/4 cup coconut oil
3/4 cup coconut milk
2 eggs
1 ts vanilla extract

Preheat the oven to 180 degrees Celsius / 160 degrees fan-forced. Line a 12 cup muffin tray with paper liners and set aside.

In a large bowl, whisk together the flours, baking powder, salt and sugar.

In a medium bowl, mash the bananas and peanut butter together until smooth. Add the eggs and beat until well combined. Add the oil, milk and vanilla and mix to combine.

Pour the wet ingredients into the dry ingredients and stir together with a fork until only just combined.

Spoon the mixture evenly into the prepared tin and bake for 15-20 minutes or until golden brown and the top springs back when you press lightly.

Leave in the tin for 5 minutes before turning out onto a wire rack to cool completely.

Serve with a big glass of milk and watch kids and big kids smile!

Makes 12.

Baked Banana and Blueberry Pancake


So baked pancakes. Did you know that was a thing? We love pancakes and pikelets in this house. I love that you can pack them full of good stuff and the kids still eat them. The kids love them just because they taste good.

Most days though we just don't have time to stand at the stove and cook pancakes 4 at a time in a pan. Enter baked pancakes. You mix up all the same ingredients, pour them into a preheated pan and cook in the oven for 20 minutes or so while you go and do something else. Brilliant!

My version uses lots of eggs, wholemeal spelt flour and the sweetness of banana, blueberries and a small amount of coconut sugar. I took it out of the oven just before I left for school pick up so it was ready to eat as soon as we all got home.

This was a delicious afternoon tea for my boys but it would be a perfect weekend brunch as well.

Baked Banana and Blueberry Pancake
Adapted from All Recipes

3 eggs
1 large very ripe banana
1 tbs coconut sugar
1 ts vanilla extract
1 cup wholemeal spelt flour
1 ts baking powder
pinch salt
1/2 cup blueberries
4 tbs butter or coconut oil

Preheat the oven to 200 degrees celsius / 180 degrees fan-forced. Add the butter or coconut oil to a 20 x 30cm baking dish and place the baking dish into the oven to preheat as well.

Place the eggs, banana, coconut sugar and vanilla into a food processor or blender and blitz until smooth. Add the remaining ingredients (except the blueberries) and process for a few seconds until well combined, scraping down the sides if you need to.

Carefully remove the hot pan from the oven and swirl it to coat the bottom evenly with the melted butter or coconut oil. Pour in the batter, scatter the blueberries over the top and return to the oven to bake for 20-25 minutes. It will be golden brown, puffed up and smell amazing.

Leave to cool in the tin for 10 minutes before slicing or leave to cool completely and serve at room temperature.

Secret Recipe Club reveal day seems to have come around very quickly this month, which is a bit of a worry because that means it is exactly 3 weeks today until we move and there is SO much still to do!

Luckily Lynn from my assigned blog for this month Turnips 2 Tangerines has provided lots of inspiration for snacks to keep us going amidst all the boxes and associated clutter.

I was excited to learn that Lynn is from Wisconsin as that is where I spent a very happy semester finishing my law degree at Marquette University in Milwaukee. I have so many great food memories from my time there including buttery chargrilled corn at Summerfest, visiting Bella's Fat Cat for frozen custard and enjoying brats on the grill at a 4th of July picnic (oh and the brats MUST be cooked in beer first before being grilled for best results).

I spent ages on Lynn's blog and lots of recipes caught my eye. Lynn's Chicago Style Hot Dog looked just like what I remember but unfortunately we can't get any of those authentic ingredients here in Australia. I also drooled over her Popcorn and Peanut Mix which my boys would love and these Gingerbread Scones with Maple Syrup Glaze sound amazing and very Christmassy.

But if you have spent any time here you will know we love bananas and peanut butter so when I came across Lynn's Banana Brownies with Chocolate Peanut Butter Glaze the search was over.

Now I was in Wisconsin during summer and it was gorgeous but in her post for these brownies Lynn mentions the high for the day was going to be -5. That's -20 degrees Celsius and so cold I can't even imagine it! Where I live it is considered freezing if the maximum doesn't go above about 15.

You really can't go wrong with a combination of chocolate, banana and peanut butter and these brownies don't disappoint. Moist and sweet and completely moreish, my boys devoured these and they were all gone in a day.  Perfect for afternoon tea with a big glass of milk.

We only had medium peanut butter so my glaze wasn't smooth but the little bit of extra crunch just added to the deliciousness.

Banana Brownies with Chocolate Peanut Butter Glaze
Adapted from Turnips 2 Tangerines

For the brownies:
1/2 cup butter, melted and cooled
1/3 cup coconut sugar
3 tbs raw cacao
2 eggs, lightly beaten
1 ts vanilla extract
1/2 cup gluten free flour
1 ts baking powder
1/4 t salt (I used salted butter so left this out)
1/2 cup mashed ripe banana (I used 2 small bananas)
1/2 cup 85% dark chocolate roughly chopped

Preheat the oven to 170 degrees Celsius. Grease and line a 11 x 7 baking pan and set aside.

In large bowl combine the flour, sugar, cacao, baking powder and salt.

In a medium bowl, mix together the butter, eggs, mashed banana and vanilla. Add the flour mixture and fold through. Stir in the chocolate.

Pour into the prepared pan and bake for 20-25 minutes. Do not over bake.

Once cooled, pour over the glaze. 

For the glaze:
1/2 cup 70% dark chocolate roughly choppped
2 tbs natural peanut butter
1 tbs rice malt syrup
pinch salt

In a small pan over low heat, combine the chocolate, syrup and peanut butter. Stir until smooth and immediately pour over the brownies and smooth the top.

I'm beginning to think I have a bit of an obsession with banana bread. I was too scared to check just how many variations I've posted over the years but I know I've never made a Pumpkin Banana Bread before!

We bought a whole pumpkin last weekend for just $2 and we enjoyed it roasted last night, mashed for lunch today and now baked into a cake. There will also be pumpkin soup made in a few days when it cools down again after a few days of unseasonably hot weather.

Mr Fussy 4yo loves cinnamon and was willing to taste some pumpkin roasted with cinnamon last night (it got a screwed up face) but even he couldn't resist this Pumpkin Banana Bread still warm from the oven and spread with lots of butter. It was the perfect afternoon tea for the kidlets and I can vouch for the fact that it is just as good if not better toasted the next day.

The original recipe had 1/2 cup honey AND 1/2 cup sugar which I replaced with just 1/2 cup rice malt syrup and an extra banana and it definitely sweet enough for us. You may want to increase it a little.

This was incredibly moist, lightly spiced and absolutely delicious. We will be making it again!

Pumpkin Banana Bread
adapted from allrecipes

3 ripe bananas, mashed
2 large eggs
1/3 cup olive oil
1 1/3 cups pumpkin puree
1/2 cup rice malt syrup
2 1/2 cups plain flour
1 ts baking powder
1 ts baking soda
1/2 ts salt
2 ts cinnamon
1/4 ts nutmeg
1/4 ts cloves

Preheat oven to 175 degrees C / 350 degrees F. Grease and line a 9 x 5 inch loaf pan.

In a large bowl, stir together the mashed banana, eggs, oil, pumpkin and syrup. In another bowl combine the dry ingredients and then stir these into the banana mixture until just combined (don't over-mix).

Pour batter into the prepared pan and bake for 45 minutes (mine took 50 - it was huge!) or until the top springs back when touched and a skewer comes out clean.

Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely. Serve warm or cold. Suitable to freeze.

TMX - place bananas, eggs, oil, pumpkin and syrup into the mixing bowl and blend for 10 seconds / speed 6. Add remainder of ingredients and blend 6 seconds / speed 6. Scrape down the sides of the bowl and proceed with baking instructions above.

Grain-Free Banana Cupcakes

I'm never really sure on the difference between a muffin and cupcake. I mean sure, a cupcake usually has icing but if you take that away, they are both still cake! These cupcakes (muffins?) are the first grain free cupcake I've made that is also free of any sweetener. I was worried they wouldn't be quite sweet enough but the extremely (think nearly black all over and very mushy) ripe bananas did their job.

These are moist, sweet and intensely banana-y. The perfect afternoon tea with a big glass of milk. My boys loved them and have been asking me to make more.

I managed to snap a photo of the last one before it was quickly snaffled up too. Now I just have to manage to leave some bananas long enough and then I will definitely be making these again.

Grain and Dairy Free Banana Cupcakes
Very slightly adapted from Wellness Mama

5 Eggs
3 medium very ripe bananas
¼ cup coconut oil
½ cup coconut flour
1 tsp bicarbonate soda
1 tsp vanilla
small amount of milk to thin (may not need)

Preheat oven to 190 degrees celsius. Grease a muffin tin or lay out silicone liners on a tray. You will need 12-15.

Place all ingredients into food processor or blender and mix until smooth and well combined. If batter is too thick, add a little milk to thin it out but don't let it get runny at all (mine was quite runny without adding any milk but this made for a very moist cupcake).

Spoon into the prepared pans and bake for 13-18 minutes until lightly browned and set in middle. Allow to cool in the pans for 5 minutes before turning out onto a wire rack to cool completely. Enjoy!

Banana Layer Cake with Whipped Chocolate Ganache Frosting


So Noah was lucky enough to have 2 cakes for his first birthday - his smash cake on the weekend and then another cake on his actual birthday. I love the combination of banana and chocolate and knew as soon as I saw this cake on Whipped that it would be perfect for my little birthday boy. I made only minor changes to the cake recipe and smothered it in a gorgeous dairy free chocolate ganache.

The cake was a big hit with everyone but I unfortunately didn't get any great pictures of it. Noah may not look too happy in this shot but believe me the cake disappeared in record time. This cake eating is serious business!

Banana Layer Cake (Dairy Free)
Adapted from Whipped

2 cups plain flour
1 ts baking powder
3/4 teaspoon bicarb soda
1/4 teaspoon salt
1 cup dextrose*
1/3 cup olive oil
2 ts vanilla extract
3 large eggs
1 cup mashed ripe banana (around 3 medium bananas)
1/2 cup coconut yoghurt (or regular yoghurt if not dairy free)

Preheat oven to 180°. Grease and line 2 x 8 inch round cake pans and set aside.

Combine dry ingredients in a small bowl, stirring together with a whisk.

In a stand mixer or food processor, combine the dextrose, oil, vanilla, mashed banana and eggs and beat at medium speed until well combined. Add in the flour mixture and yogurt alternately, beginning and ending with flour mixture.

Pour the batter evenly into the prepared pans. Bake at 180° for 30-35 minutes (mine were done at 25 minutes so check early and often) or until a skewer comes out clean. Allow to cool in the pans for 10 minutes before removing from the pans and cooling completely on wire racks.

*If you want to use regular sugar you will need to check the original recipe as I made a few minor changes to compensate for the dextrose.

Whipped Chocolate Ganache Frosting

For the frosting I adapted Quirky Cooking's dairy free chocolate ganache which I have previously used as a tart filling here. I chilled it for a few hours then whipped it in the thermomix with the butterfly attachment for 20 seconds or so until it was thick and fluffy. I popped it back in the fridge for 10 minutes before icing the cake.

To assemble the cake:

Level the tops of the cakes if needed (I only level the bottom layer), then smooth about 1/3 of the frosting on top of one cake layer. Gently place the second layer on top and spread the remaining frosting over the top and sides of the cake. Decorate with sprinkles. The cake will keep covered in the fridge for up to 3 days.

Chocolate Frozen Yoghurt with Caramelised Bananas (Secret Recipe Club)


Secret Recipe Club time! I really wasn't sure whether to participate this month or not as our baby's due date was 30th October. Luckily though I made a great call figuring he would be early and I was right! Our third gorgeous little boy arrived on Monday 21st October.

I will be taking next month off so we can settle in without any pressure on me to cook but I will back with SRC in December/January. Meanwhile my hubby has really stepped up and made us some delicious meals including macaroni and cheese and a slow-roasted pork belly. Yum!

It feels like a lifetime ago when I made my pick for this month's SRC. I was assigned the Bewitching Kitchen by Sally and once again I was really spoilt for choice when it came to choosing a recipe. Sally is Brazilian and it was fascinating to read her story, explore her traditional Brazilian recipes and also read about her background in science (my husband is a microbiologist).

When it came to actually choosing a recipe though I couldn't go past ice cream, which has been my major vice this pregnancy. Interestingly enough as I write this after his birth my sweet tooth has virtually gone and I'm wanting smoked salmon, sushi and brie!

So for this month I chose Sally's Chocolate Frozen Yoghurt with Caramelized Bananas. This recipe is worth making just for sheer deliciousness but make sure you check out her post for a beautiful photo and story of her mother, the world's expert on caramelised bananas!

Oh and please excuse the terrible photo. It wasn't quite firm enough to scoop properly and it didn't last long enough for me to take another one!

Chocolate Frozen Yoghurt with Caramelised Bananas
Recipe very slightly adapted from Bewitching Kitchen

40g butter
3 large ripe bananas, cut into thick slices
3 tbs brown sugar
2 tbs lemon juice
125ml plus 60mls full cream milk (divided)
2 1/2 tablespoons cocoa powder
2/3 cup sugar
Pinch of salt
1 ts vanilla extract
1 1/3 cups Greek yogurt
60g dark chocolate, finely chopped

Melt the butter in a non-stick pan over medium heat. Add the sliced bananas in a single layer and sprinkle over the brown sugar. Cook, turning once, until caramelised. This will take 5-8 minutes. Add the lemon juice and swirl the pan to completely dissolve the sugar.

Remove the pan from the heat. Scrape three-quarters of the bananas into a food processor, add the 60 mls of milk and process until smooth. Transfer to a small bowl and place in the freezer for 15 minutes or until completely chilled. Chop the remaining bananas and freeze until chilled.

In the same food processor bowl beat together the cocoa, sugar, salt, vanilla and the remaining 125 mls of milk. Add in the yogurt and then the banana puree and process until smooth.

Transfer the mixture to an ice cream maker and churn until nearly frozen. Mix in the chopped bananas and pieces of chocolate. Scrape the frozen yogurt into an airtight container, cover and freeze until firm, at least 2 hours.

Banana Bread (Wheat, Dairy, Sugar and Nut Free)

I have been attempting to bake extra batches of things lately to stash in the freezer for after-baby. While I really should be focusing on dinners I can't seem to stop baking! I've had 2 very ripe bananas burning a hole in my fruit bowl (so to speak) so when I saw The Natural New Age Mum post a blog on not 1 or 2 but 8 different banana bread recipes, their fate was sealed!

The one I chose and adapted was from Mamacino, another favourite blogger of mine. While bananas are high in fructose I made it lower by using dextrose instead of regular sugar along with a few other little changes. It was absolutely delicious! Really moist and with a great banana flavour. The kids and I loved it and we still have over 1/2 the loaf in the freezer.

This one's a winner!

Easiest Banana Bread
(Wheat, Dairy, Sugar and Nut Free)
Adapted from Mamacino

1 cup white spelt flour
½ cup wholemeal spelt
2 tsp baking powder
1/3 cup coconut sugar
1 tsp ground cinnamon
3 eggs
1/2 cup coconut oil
2 mashed bananas
1 tsp vanilla extract

Preheat the oven to 160 degrees Celsius. Grease a loaf pan and line with baking paper.

Combine all the dry ingredients in a large bowl and make a well in the centre. In a separate bowl, whisk together the eggs, oil, bananas and vanilla. Pour the wet ingredients into the dry ingredients and mix until it is just combined. Pour the mixture into your prepared pan.

Bake for approximately 45-50 minutes or until the top springs back and a skewer comes out clean when you test it. Leave in the pan for five minutes and turn out to cool on a rack.

Lovely warm from the oven with a big smear of butter (if not dairy-free) or slice and freeze to make wonderful toast.

Banana Bread

Fellow Aussies will remember the Great Banana Shortage of 2010 when Cyclone Larry destroyed up to 90% of Australia's banana crops. I think I actually got hubby a banana for his birthday that year!

What a difference a few years makes, because I recently bought a ton of them at 99c/kilo and we've been eating bananas every way you can think of since then. Which brings me to banana bread ...

Nothing beats homemade banana bread. Not only does it taste great but when you've got cheap bananas you can almost make a loaf for less than you can buy a single slice of it at some cafes ($4.75 at Gloria Jeans on the weekend).

I'm still trying to cut back on wheat and dairy but in a way that's not particularly noticeable to the rest of the family. Here I swapped out half the wheat flour for white spelt and used non-dairy milk and butter. You can of course use any flour, milk and butter you like.

This made a lovely moist loaf with a heady banana flavour and gorgeous aroma from the spices. Normally I would use dark brown sugar in something like this but had run out so I made do. As you do.

I froze most of the loaf already sliced so that's this week's lunchbox treat sorted. Or maybe my breakfast!

Banana Bread
Adapted from Taste.com.au

1 cup plain flour
1 cup white spelt flour (or plain flour)
1 tbs baking powder
1 ts cinnamon
1/4 ts allspice
Pinch of salt
1/3 cup brown sugar
1 tbs golden syrup
2 eggs
1/2 cup oat milk (or any milk)
50g nuttelex (or butter), melted
3 medium overripe bananas, mashed

Preheat oven to 180 degrees (160 degrees fan forced). Spray a loaf tin (approx 11 x 21cm) with oil spray and line the base and 2 sides with baking paper, allowing it to overhang.

Place the flours, baking powder, cinnamon, allspice, salt and brown sugar in a large bowl and whisk to combine. In a separate bowl mix together the mashed banana, eggs, milk, melted butter and golden syrup.

Add the banana mixture to the dry ingredients and mix gently until just combined. Spoon into the prepared tin and bake for 40-50 minutes or until a skewer comes out clean. Leave in the pan for 5 minutes before turning out onto a wire rack to cool completely.

This cake will keep for 3 days in an airtight container on the bench or slice and freeze for up to 1 month.

I've been on a real pumpkin kick lately, it's just such a versatile ingredient. Coming into summer here I foresee lots of roast pumpkin and feta salads, while from the northern hemisphere there is sure to be an abundance of pumpkin pie and cake recipes. Bring it on!

Ever on the hunt for healthy lunchbox ideas for hubby and the boys, I came across these muffins in a healthy lunchbox post on Fig & Cherry. I made a few small changes to the original recipe - using all wholemeal flour instead of half and half. I also added a mashed banana simply because I didn't have quite enough leftover pumpkin and wasn't keen to cook any more.

All my boys loved these. I think the banana upped the sweetness a bit and helped them to not be quite so pumpkiny (a bonus for my pumpkin-hating husband).

We took these for morning tea on our day trip to Underwater World last weekend and they felt like a real treat! Definitely made me feel better about the fish and chips we had for lunch later that day :-)

Pumpkin, Banana and Date Muffins
Adapted from Weight Watchers via Fig & Cherry

2 cups (300g) wholemeal self-raising flour (or 2 cups plain flour plus 4 ts baking powder)
2 ts ground cinnamon
1/3 cup (80g) brown sugar
1/2 cup (125ml) oat milk (or any milk)
1/4 cup (60ml) rice bran oil
1 egg
1 cup (250g) cooked mashed pumpkin
1/2 cup (100g) mashed ripe banana
1/2 cup (80g) dried dates, chopped
1 tbs raw sugar (optional)

Preheat the oven to 180 degrees (160 degrees fan forced). Line a 12 hole muffin tray with paper liners and set aside.

Whisk together the flour, cinnamon and sugar in a large bowl. In a separate bowl, mix the milk, egg and oil together. Pour the wet ingredients over the dry and stir until just combined. Fold through the pumpkin and dates being careful not to overmix.

Spoon the mixture into the prepared tray, sprinkle the tops with raw sugar and bake for 18-20 minutes or until cooked. Stand in the tin for 5 minutes before turning out onto a wire rack.

Makes 12 muffins.

Tuesdays with Dorie: Lots of Ways Banana Cake

Kimberly of Only Creative Opportunities chose Dorie's Lots of Ways Banana Cake this week. I adore banana cake (and banana bread and banana pancakes and just plain bananas). My son Oscar is the same. In fact, his third word was banana!

As I have mentioned before, Oscar has a wheat and dairy intolerance. Most of the time it's no problem at all to sub in alternatives but I haven't been too adventurous with baking. And I don't need to be yet. At 15 months old, he's not eating a whole lot of cake!

While I didn't make this cake specifically for Oscar, it's nice for him to be able to have a taste of some of the yummy things I make so I did a wheat and dairy free version with dried apples and a passionfruit icing. Delicious!

Banana Cake with Passionfruit Glaze
(Wheat and Dairy Free)
Adapted from Lots of Ways Banana Cake on pp204-5 of Baking: From My Home to Yours

1/2 cup white spelt flour
1/2 cup wholemeal spelt flour
1/3 cup gluten free flour (mine was a blend of maize, rice and soya flours)
1/2 ts xanthum gum
pinch of salt
1 ts baking powder
1/2 ts baking soda
1/2 ts nutmeg
90g nuttelex or other dairy free spread
3/4 cup brown sugar
1 egg
1ts vanilla extract
2 ripe bananas, mashed
1/4 oat milk (or soy milk etc)
1/2 cup dried apple, chopped

Preheat your oven to 180/350 degrees. Grease and line an 8 inch round pan and set aside.

Whisk the flours, salt, baking powder, baking soda, nutmeg and xanthum gum together.

Using a stand mixer, beat the nuttelex and sugar together until creamy. Add the egg and then the vanilla, beating well after each addition. Lower the speed and add the bananas. Mix well. Add the dry ingredients, followed by the milk and beat until just combined. Stir through the dried apple using a rubber spatula.

Pour the batter into your prepared pan and bake for 35-40 minutes or until the cake is a deep golden brown and the cake is starting to pull away from the sides. A skewer inserted into the middle should come out clean.

Cool in the pan for 5 minutes before turning out onto a rack to cool completely.

Passionfruit Glaze

1/2 cup pure icing sugar, sifted
1 passionfruit
hot water

In a small bowl, add the juice and pulp of your passionfruit to the icing sugar and stir. Add just enough hot water (1 -2 ts) to reach the consistency of thick cream. It should coat the spoon but still be easy to spread. Pour over your cooled cake and spread to the edges.

The taste test ...

Awesome. So moist and absolutely packed with flavour. The passionfruit icing finished it off perfectly. This is one cake I will be making again and again!

Tuesdays with Dorie: Banana Coconut Icecream Pie

This week Spike of Spike.Bakes chose Dorie's Banana Coconut Icecream Pie and I have to admit, I really wasn't sure about this one! Even after reading the recipe I had no idea whether this was something I would enjoy or not. Still, I ploughed on but couldn't resist making a few changes.

My version has a plain shortbread crust (no coconut) and 2 layers of filling instead of one. I didn't want to mess up the creamy perfection of the chocolate ice-cream so I made a separate banana layer using some of my stash of frozen bananas whizzed up with a teaspoon of vanilla essence and some heavy cream. I then sprinkled some toasted shredded coconut on top.

The taste test ...

Not bad! Probably not something I would make again but banana and chocolate are always a great combination. I'm glad I didn't use any rum in the filling or coconut in the base. The flavours here were just right for us.

Ten in 10 Update 4 and Banana Pancakes

I don't know if it came through in last week's update but I was feeling a little blah about my Ten in 10 journey. So this week I didn't do anything special. Oh I still exercised but apart from that I didn't worry about any calorie counting or food choices. The result? I actually lost weight.

No wonder dieting makes us all crazy when there's no rhyme or reason to it!

This week I re-read 'Changing Habits, Changing Lives' by Cyndi O'Meara. I think this is one of the most common sense approaches to healthy living and re-reading it has brought me back to basics.

The premise is simple: unhealthy habits like skipping breakfast, not exercising and drinking too much coffee are all habits that can be broken. Unlike other programs where you go cold turkey, here you read one chapter at a time and start a new healthy habit. Chapter 1 is on eating a healthy breakfast every day. So for a week or month or however long it takes you to form that habit, that's all you work on before proceeding to chapter 2.

Now I've always eaten breakfast. There's no way I would make it through the day if I didn't. But this week I will be enjoying some healthier and more filling options like bircher muesli. Hopefully will have some recipes to post as well.

Now onto another breakfast, we had these scrummy banana pancakes a few weeks ago. They were without doubt the BEST banana pancakes on the face of the earth. I took photos and filed it away to post sometime. Problem is I made up the recipe on the spot and I cannot for the life of me remember what I did.

I know there was yoghurt in them, and ... umm ... bananas? Sorry 'bout that.

Tuesdays with Dorie: Banana Bundt Cake

This week Mary of The Food Librarian chose the Classic Banana Bundt Cake. If you've read Mary's blog you'll know this wasn't a huge surprise - she is the queen of the bundt!

After reading the P&Q for this recipe I decided my current bundt pan wouldn't be big enough (and I was right, this cake was huge!) so we went on the hunt for a new one at Kitchenware Plus down at Loganholme. For a kitchen gadget junkie like myself this place is nirvana! I found a Wilton bundt pan within a few minutes. Perfect. Then I checked the price ... $84.95!! For a cake pan?? Granted it's a great brand and clearly great quality too but that is just ridiculous. I ended up going with a 12 cup silicone pan for just $27.95 instead.

This was a breeze to whip up but I was really annoyed with myself for not buying bananas ahead of time and letting them ripen up. All the bananas I found were a little green and even after a night sealed in a paper bag there were still no where near what I would have liked.

I made the recipe exactly as stated except for using half regular and half gluten free flour. I also accidentally added baking powder instead of baking soda but that didn't seem to do any harm!

The taste test ...

This is one moist cake! I was a little worried as it took FOREVER to cook (about 90 minutes instead 65-75). It just didn't have quite the banana hit I was hoping for but that will be easy fixed for next time. The lemon glaze was delicious too.
