Daring Cooks June - Pâtés and Bread

Wow it feels like ages since I've done a Daring Cooks challenge. Actually that's not totally accurate. It's ages since I completed one on time and got around to posting it!

Our hostesses this month, Evelyne of Cheap Ethnic Eatz, and Valerie of a The Chocolate Bunny, chose delicious pate with freshly baked bread as their June Daring Cook’s challenge! They’ve provided us with 4 different pâté recipes to choose from and are allowing us to go wild with our homemade bread choice.

I didn't follow the pâté recipes provided but I hope what I've done fits within the spirit of the challenge. I made a simple salmon mousse and the sandwich bread.

Salmon Mousse

1 x 415g tin premium red salmon, drained, skin and bones removed
250g cream cheese
approx 200g smoked salmon
juice of 1 lemon
1 1/2 ts gelatine powder

Spray 4 small dariole moulds (I used plastic) with olive oil spray then line with plastic wrap. Then use the smoked salmon slices to completely line each mould, coming right to the top and ensuring there are no gaps.

Place the lemon juice in a small saucepan over low heat. Once warm sprinkle over the gelatine powder and turn off the heat. Stir until the gelatine is completely dissolved then set aside.

Place the tinned salmon and cream cheese in a food processor and process until very smooth, at least 2 minutes. With the motor running, drizzle in the lemon juice mixture and process for another minute or so until completely incorporated and smooth.

Pour the mousse mixture into each mould, tapping the mould on the bench to remove any air bubbles. Cover the tops with plastic wrap and refrigerate for at least 2 hours.

To serve, gently ease each mousse out of the mould and remove the plastic wrap. Garnish with sprigs of fresh dill. Allow to stand at room temperature for 30 minutes before serving with fresh baguette or toast slices.

This mousse is intensely salmon flavoured but the lemon cuts through the richness. A perfect dinner party entrée.

Sandwich Loaf/Baguettes

3 tsp (15 ml) active dry yeast
2 2/3 cups (600 ml) whole milk (3.25 per cent fat), warmed to a temperature of 97ºF (36ºC)
2 1/2 tsp (12.5 ml) salt
2 tsp (10 ml) butter, melted
5 1/3 cups (750g) unbleached white bread flour, + 1/2 cup (75g), for working the dough
2 tbsp (30 ml) butter, for the loaf pan

To make loaves:

In a large mixing bowl, combine the yeast and warm milk, and whisk to dissolve. Whisk in the salt and the melted butter. Gradually sprinkle in the flour, stirring with a wooden spoon.

When the dough becomes too thick to stir, knead it with your hands, for about 5 minutes, until you obtain a smooth, homogeneous dough that is soft and a little sticky. Cover with plastic wrap and let rest 30 minutes.

Knead the dough 20 strokes (still in the bowl), cover again, and let rest for 1.5 hours.

Transfer the dough to a lightly floured work surface, and divide in two. Form each half into a sausage. Transfer the dough to a greased baking sheet. Cover lightly and let rise in a draft-free area for 60 minutes, or until doubled in volume.

Fill a large baking pan with hot water (simmering is fine) and place in the oven. Preheat oven to 450ºF (240ºC). Using a very sharp knife cut 3 slits into the top of each loaf. Spritz the loaves with warm water and sprinkle the tops with sesame seeds (optional).

Put the loaves in then oven and bake for 10 minutes. Do not open the oven door during this time.

After 10 minutes, lower the oven temperature to 400ºF (200ºC) and continue baking for about 25 minutes, or until the loaves are nicely golden. Unmould and let cool on a rack.

Next time I would love to try the proper french bread recipe. It's been on my to-do list for ages but I just ran out of time. I was also worried how my starter would fare overnight considering how cold it has been lately.

TIP: I have always struggled with getting my dough to prove/rise well, especially in winter. But for this challenge I used a tip from Chocolatchic to proof the dough in the car! This worked spectacularly well and I think I will do it every time from now on.

Daring Cooks March - Risotto

This month's Daring Cooks challenge was all about comfort food. The meal? Risotto!

The 2010 March Daring Cooks challenge was hosted by Eleanor of MelbournefoodGeek and Jess of Jessthebaker. They chose to challenge Daring Cooks to make risotto. The various components of their challenge recipe are based on input from the Australian Masterchef cookbook and the cookbook Moorish by Greg Malouf.

I adore risotto so we tend to have it quite regularly. I do admit to cheating though and using premade stock. Not this time though.

The recipe in the MasterChef cookbook (which I happened to receive for Christmas) was for a pumpkin risotto. Hubby hates pumpkin with a passion so I chose to do a roast chicken and garlic risotto instead.

You don't really need a recipe for stock. I roasted 2kg of chicken drumsticks with 2 whole heads of garlic at 200 degrees for a couple of hours. I sauteed a couple of leeks in olive oil then added the chicken and garlic. Covered the whole lot with water, brought to the boil then simmered for 2 1/2 hours. Removed the meat from the bones and stored separately. Refrigerated the stock overnight then removed the fat on the surface. Bring the stock back up to the boil then strain and you are ready to go.

The verdict? Yum! The homemade stock really takes this dish from easy weeknight meal to dinner party showstopper. Absolutely delish and very easy to do.

Daring Cooks February - Mezze

Daring Cooks time again! It feels like ages since I participated in the Daring Cooks challenges but in reality I only skipped January. This month brought the opportunity to make something that's been on my to-cook list for about year - pita bread!

I've really been getting into making bread but this one has always had me worried. How do you get your pita bread to puff up like they should? What are they like if they don't? I needn't have worried though because these worked perfectly. If you've ever wanted to try making pita then this is the recipe for you.

Now the actual challenge was to make a mezze table, a Middle Eastern version of Spanish Tapas, but basically a whole lot of small dishes that are served before a main meal or as finger food. I shamefully did the bare minimum and just made the pita and hummus.

The 2010 February Daring COOKs challenge was hosted by Michele of Veggie Num Nums. Michele chose to challenge everyone to make mezze based on various recipes from Claudia Roden, Jeffrey Alford and Naomi Dugid.

Pita Bread – Recipe adapted from Flatbreads & Flavors by Jeffrey Alford and Naomi Duguid

Prep time: 20 minutes to make, 90 minutes to rise and about 45 minutes to cook 2 teaspoons regular dry yeast (.43 ounces/12.1 grams)
2.5 cups lukewarm water (21 ounces/591 grams)
5-6 cups all-purpose flour (may use a combination of 50% whole wheat and 50% all-purpose, or a combination of alternative flours for gluten free pita) (17.5 -21 ounces/497-596 grams)
1 tablespoon table salt (.50 ounces/15 grams)
2 tablespoons olive oil (.95 ounces/29 ml)

Directions:

1. In a large bread bowl, sprinkle the yeast over the warm water. Stir to dissolve. Stir in 3 cups flour, a cup at a time, and then stir 100 times, about 1 minute, in the same direction to activate the gluten. Let this sponge rest for at least 10 minutes, or as long as 2 hours.

2. Sprinkle the salt over the sponge and stir in the olive oil. Mix well. Add more flour, a cup at a time, until the dough is too stiff to stir. Turn it out onto a lightly floured surface and knead for 8 to 10 minutes, until smooth and elastic. Rinse out the bowl, dry, and lightly oil. Return the dough to the bowl and cover with plastic wrap. Let rise until at least doubled in size, approximately 1 1/2 hours.

3. Place a pizza stone, or two small baking sheets, on the bottom rack of your oven, leaving a 1-inch gap all around between the stone or sheets and the oven walls to allow heat to circulate. Preheat the oven to 450F (230C).

4. Gently punch down the dough. Divide the dough in half, and then set half aside, covered, while you work with the rest. Divide the other half into 8 equal pieces and flatten each piece with lightly floured hands. Roll out each piece to a circle 8 to 9 inches in diameter and less than 1/4 inch thick. Keep the rolled-out breads covered until ready to bake, but do not stack.

5. Place 2 breads, or more if your oven is large enough, on the stone or baking sheets, and bake for 2 to 3 minutes, or until each bread has gone into a full balloon. If for some reason your bread doesn't puff up, don't worry it should still taste delicious. Wrap the baked breads together in a large kitchen towel to keep them warm and soft while you bake the remaining rolled-out breads. Then repeat with the rest of the dough.

Look at that puff!

Just a note about the breads, I found it took much, much longer for them to cook despite using a very hot oven and a pizza stone. My pita took about 15 minutes to cook and puff up. And even then they didn't brown much. Still delicious though.

Hummus – Recipe adapted from The New Book of Middle Eastern Food by Claudia Roden

Prep Time: Hummus can be made in about 15 minutes once the beans are cooked. If you’re using dried beans you need to soak them overnight and then cook them the next day which takes about 90 minutes.

1.5 cups dried chickpeas, soaked in cold water overnight (or substitute well drained canned chickpeas and omit the cooking) (10 ounces/301 grams)
2-2.5 lemons, juiced (3 ounces/89ml)
2-3 garlic cloves, peeled and crushed
a big pinch of salt
4 tablespoons tahini (sesame paste) OR use peanut butter or any other nut butter—feel free to experiment) (1.5 ounces/45 grams)
additional flavorings (optional) I would use about 1/3 cup or a few ounces to start, and add more to taste

Directions:

1. Drain and boil the soaked chickpeas in fresh water for about 1 ½ hours, or until tender. Drain, but reserve the cooking liquid.

2. Puree the beans in a food processor (or you can use a potato masher) adding the cooking water as needed until you have a smooth paste.

3. Add the rest of the ingredients and mix well. Adjust the seasonings to taste.

This hummus recipe is identical to the one I make for myself quite regularly and it was fabulous with the pita. Now that I know how easy the pita is I will be whipping them up for myself more often!

Daring Cooks December - Beef Wellington

Well this will be short and sweet because my Beef Wellington was an epic fail. I can't even show the photo I took because it looks like road kill. In spite of using our super-duper meat thermometer it was massively overcooked and dry as sawdust. Picture a shriveled piece of beef surrounded by brown stuff and pastry crumbs. We couldn't even eat it :(

I imagine if cooked well it would be absolutely sensational!

Daring Cooks November - Sushi

The November 2009 Daring Cooks challenge was brought to you by Audax of Audax Artifex and Rose of The Bite Me Kitchen. They chose sushi as the challenge.

Yay, sushi! While I'm not exactly a sushi connoisseur (I'm not a raw fish fan - it's a textural thing) I have made it a number of times at home. This meant I already had the rice, mats, vinegar etc and was ready to get started.

Our challenge this month had 4 elements - first the sushi rice itself, which we then made into 3 different end products. I followed the recipe to the letter and have to say my rice turned out better than it ever has before.

First up - Dragon Roll ...

My dragon roll filled with delicious terriyaki chicken and topped with sliced avocado.

And turned into a dragon. Grrrr!

Yes, I am aware my dragon looks like it was made by a 3 year old. Let's pretend it was!

Next, Spiral Sushi Roll ...

I think I rolled these the wrong way because they look like the regular sushi rolls I buy all the time. Very tasty though, filled with terriyaki chicken, avocado, cucumber, carrot, omelette and sesame seeds.

And last, bite sized Ngiri ...


I made two varieties of these, one with smoked salmon and the other with omelette and nori. Yum!

Daring Cooks October - Vietnamese Pho

Daring Cooks time again!

The October 2009 Daring Cooks’ challenge was brought to us by Jaden of the blog Steamy Kitchen. The recipes are from her new cookbook, The Steamy Kitchen Cookbook.

I was really excited about this month's pick, not only because it was chosen by Jaden but also because I love Vietnamese food! It is definitely my favourite Asian cuisine - fresh, fragrant and flavoursome. That being said, I've never actually had pho before.

We were given the option of doing either a long or short version of the dish. I originally chose the short version (which uses a premade stock) because I intended to make it again later in the month. Unfortunately I ran out of time but no matter, we will definitely be having this again!

I only made minor changes to the recipe, using chicken thighs because I feel they have more chickeny flavour, and using vermicelli noodles instead of the wider rice stick ones.

The taste test ...

Well, I didn't pick the best day to make soup for dinner. It was a hot and sticky 35 degrees in Brisbane that day, definitely not soup weather but it didn't matter. This was AMAZING! For really very little effort and a short list of ingredients we had a phenomenal meal. Light, fragrant and absolutely packed with flavour. I was also impressed with how clear the broth remained even after simmering the chicken. All I can think is if it tastes this good using purchased stock, it must be unbelievably good with homemade. I can't wait to try!

Vietnamese Chicken Pho

For the Chicken Pho Broth:
2 tbsp. whole coriander seeds
4 whole cloves
2 whole star anise
2 litres store-bought or homemade chicken stock
1 whole chicken breast (bone in or boneless)
½ onion
7.5 cm chunk of ginger, sliced and smashed with side of knife
1 to 2 tbsps. sugar
1 to 2 tbsps. fish sauce
500 grams dried rice noodles (about ¼ inch/6 mm wide)

Accompaniments:
2 cups bean sprouts, washed and tails pinched off
Fresh cilantro (coriander) tops (leaves and tender stems)
½ cup shaved red onions
½ lime, cut into 4 wedges
Sriracha chili sauce
Hoisin sauce
Sliced fresh chili peppers of your choice

Directions:

To make the Chicken Pho Broth: heat a frying pan over medium heat. Add the coriander seeds, cloves and star anise and toast until fragrant, about 3-4 minutes. Immediately spoon out the spices to avoid burning.

In a large pot, add all the ingredients (including the toasted spices) and bring to a boil. Reduce the heat to medium-low and let simmer for 20 minutes, skimming the surface frequently. Use tongs to remove the chicken breasts and shred the meat with your fingers, discarding the bone if you have used bone-in breasts.

Taste the broth and add more fish sauce or sugar, if needed.

Strain the broth and discard the solids.

Prepare the noodles as per directions on the package.

Ladle the broth into bowls. Then divide the shredded chicken breast and the soft noodles evenly into each bowl.

Have the accompaniments spread out on the table. Each person can customize their own bowl with these ingredients.

Daring Cooks September - Indian Dosas


Our host this month is Debyi from the Healthy Vegan Kitchen. She has chosen Indian Dosas from the reFresh cookbook by Ruth Tal.

I love Indian food but have never made or even eaten dosas before so this was a great challenge. It was made more challenging by also being a vegan recipe. While I think I could go vegetarian quite easily, I do love my eggs and cheese a bit too much to go vegan for any length of time!

A dosa is essentially an indian pancake, and very similar to a French crepe in many respects. I used atta (chickpea) flour for the dosas and also subbed garam masala for the curry powder. For the filling I went with curried potatoes from our fave Indian cookbook, A Taste of India. This was a heady mixture of potatoes with onions, garlic, chili and mustard seeds. I think the mustard seeds must pack a lot of heat because even my chilli loving husband thought it was a bit too spicy!

Dosa Pancakes
1 cup (120gm) spelt flour (or all-purpose, gluten free flour)
½ tsp salt
½ tsp baking powder
½ tsp curry powder
½ cup (125ml) almond milk (or soy, or rice, etc.)
¾ cup (175ml) water
cooking spray, if needed

Combine the dry ingredients in a bowl, slowly adding the almond milk and water, whisking until smooth. Heat a nonstick skillet over medium heat. Spray your pan with a thin layer of cooking spray, if needed (I found the spray prevented the dosa mix from spreading around the pan). Ladle 2 tablespoons of batter into the center of your pan in a circular motion until it is a thin, round pancake. When bubbles appear on the surface and it no longer looks wet, flip it over and cook for a few seconds. Remove from heat and repeat with remaining batter. Makes 8 pancakes.

The taste test ...

The dosas themselves were fantastic. If you like pancakes you'll love these! I probably wouldn't make the potato filling again without major changes to the recipe. It was just too spicy and I felt it needed a fuller flavour. I would have added in some coconut milk to cut through the heat but unfortunately we'd run out. I would love to experiment with different vegan fillings and I also think the dosas would be the perfect accompaniment to a curry just on their own.

Daring Cooks August - Rice with Prawns, Mushrooms and Artichokes

It's Daring Cooks time again! Actually it was Daring Cooks time 2 days ago and I am only just getting around to posting.

This month the lovely Olga from Olga's Recipes chose a Spanish dish by José Andrés of rice with cuttlefish, mushrooms and artichokes. I am a little squeamish about some seafood so went with prawns instead of the cuttlefish.

This was an interesting dish to make but unfortunately we didn't love it. We even ended up with a huge dish of leftovers in the fridge that just never got eaten (a rarity in this house).

The flavour was to come mainly from the sofregit, a thick sauce made from simmering tomatoes, onion, garlic, capsicum and spices for an hour or so. The recipe called for just 2 to 3 tablespoons of this sauce to be added to the dish. Well, we did that and our rice was almost completely flavourless. I mean if I had closed my eyes I could have been eating almost anything. So I added in the entire batch of sofregit (a good 2 cups worth) which did help. The $7 of saffron we added was indetectable. Our allioli was also a disaster, turning into garlic flavoured oil rather than the thick greeny-golden sauce it was meant to be. Hmmm.

Maybe I missed something? Maybe there was some vital ingredient or process that I completely overlooked? Otherwise this really was a bit of a dud for us. Sorry Olga!

Daring Cooks June - Potstickers

I was both excited and daunted by this month's challenge. Not only because of the recipe itself but because it was chosen by the ever awesome Jen from Use Real Butter! We don't have potstickers as such in Australia, so to me these are modified dim sims. But whatever you call them they were in a word ... sensational!

The dough was a lot easier to work with than I thought. I made a double batch to cover the amount of filling and ended up with 40, half fried and half steamed. One discrepancy I noticed was that the recipe stated to use a tablespoon of filling for each one. I found just 1 teaspoon of filling per potsticker used up all the filling and dough perfectly, no leftovers.

The taste test ...

These were absolutely scrumptious! Of the 2 I preferred the potstickers over the steamed dumplings because of the contrasting textures but both were delicious. I made the dipping sauce with all the optional extras and it was the perfect accompaniment. I will definitely be making these again!

Chinese Dumplings/Potstickers

pork filling:
1 lb (450g) ground pork
4 large napa cabbage leaves, minced
3 stalks green onions, minced
7 shitake mushrooms, minced (if dried - rehydrated and rinsed carefully)
1/2 cup (75g) bamboo shoots, minced
1/4 (55g) cup ginger root, minced
3 tbsp (40g) soy sauce
2 tbsp (28g) sesame oil
2 tbsp (16g) corn starch OR

shrimp filling:
1/2 lb (225g) raw shrimp, peeled, deveined, and coarsely chopped
1/2 lb (225g) ground pork
3 stalks green onions, minced
1/4 cup (55g) ginger root, minced
1 cup (142g) water chestnuts, minced
1 tsp (5g) salt
3 tbsp (40g) sesame oil
2 tbsp (16g) corn starch

dough:
(double this for the amount of filling, but easier to make it in 2 batches - or just halve the filling recipe)
2 cups (250g) all-purpose flour
1/2 cup (113g) warm water
flour for worksurface

dipping sauce:
2 parts soy sauce
1 part vinegar (red wine or black)
a few drops of sesame oil
chili garlic paste (optional)
minced ginger (optional)
minced garlic (optional)
minced green onion (optional)
sugar (optional)

Combine all filling ingredients in a large mixing bowl and mix thoroughly (I mix by clean hand). Cover and refrigerate until ready to use (up to a day, but preferably within an hour or two).

Make the dough, Method 1:

Place the flour in the work bowl of a food processor with the dough blade. Run the processor and pour the warm water in until incorporated. Pour the contents into a sturdy bowl or onto a work surface and knead until uniform and smooth. The dough should be firm and silky to the touch and not sticky.[Note: it’s better to have a moist dough and have to incorporate more flour than to have a dry and pilling dough and have to incorporate more water).

Make the dough, Method 2 (my mom’s instructions):

In a large bowl mix flour with 1/4 cup of water and stir until water is absorbed. Continue adding water one teaspoon at a time and mixing thoroughly until dough pulls away from sides of bowl. We want a firm dough that is barely sticky to the touch.

Both dough methods:

Knead the dough about twenty strokes then cover with a damp towel for 15 minutes. Take the dough and form a flattened dome. Cut into strips about 1 1/2 to 2 inches wide. Shape the strips into rounded long cylinders.

On a floured surface, cut the strips into 3/4 inch pieces. Press palm down on each piece to form a flat circle (you can shape the corners in with your fingers). With a rolling pin, roll out a circular wrapper from each flat disc. Take care not to roll out too thin or the dumplings will break during cooking - about 1/16th inch. Leave the centers slightly thicker than the edges.

Place a tablespoon of filling in the center of each wrapper and fold the dough in half, pleating the edges along one side (see images in post for how to fold pleats). Keep all unused dough under damp cloth.

To boil: Bring a large pot of water to a boil and add dumplings to pot. Boil the dumplings until they float. To steam: Place dumplings on a single layer of napa cabbage leaves or on a well-greased surface in a steamer basket with lid. Steam covered for about 6 minutes.

To pan fry (potstickers): Place dumplings in a frying pan with 2-3 tbsp of vegetable oil. Heat on high and fry for a few minutes until bottoms are golden. Add 1/2 cup water and cover. Cook until the water has boiled away and then uncover and reduce heat to medium or medium low. Let the dumplings cook for another 2 minutes then remove from heat and serve.

To freeze: Assemble dumplings on a baking sheet so they are not touching. It helps to rub the base of the dumpling in a little flour before setting on the baking sheet for ease of release. Freeze for 20-30 minutes until dumplings are no longer soft. Place in ziploc bag and freeze for up to a couple of months. Prepare per the above instructions, but allow extra time to ensure the filling is thoroughly cooked.

To serve: Serve dumplings or potstickers hot with your choice of dipping sauce combinations.

Daring Cooks May - Ricotta Gnocchi

"Better late than never" has become my motto recently! While I wasn't one of those people who thinks a baby would just fit right into our household without any disruption, I have been amazed at how quickly time passes now.

The hours and days are just flying by and Oscar is now 5 weeks old. At the end of each day if he is fed, clean and happy and I have had a shower and 2 decent meals then I call that a total success!

Which brings me on to my first Daring Cooks challenge which I was really excited about. While I love to bake (and eat what I've or anyone else has baked) I think I am more of a cook. It is what I do everyday and nothing makes me happier than feeding my family.

I actually managed to complete the challenge before the posting date, but then promptly forgot to post it, or anything else for that matter.

The taste test ...

(These were incredibly difficult to photograph) Amazingly for a cheese freak like myself this was a little too ... cheesy. And definitely rich! I think part of my ambivilence comes down to simply being so tired that day that I couldn't think straight (this was my first time in the kitchen post baby and probably should've gone with something I had made before).

I had absolutely no problems making these though. The texture was perfect, they cooked well and didn't fall apart despite my very rough shaping job. Hubby wasn't keen on the texture. He loves gnocchi but of the potato and flour variety where there is a little bite to each piece.

I would make these again though, perhaps with lemon rather than sage to cut through the richness. All in all a great first challenge!

Ricotta Gnocchi
Recipe from Judy Rodgers' The Zuni Café Cookbook

Yield: Makes 40 to 48 gnocchi (serves 4 to 6)

For the gnocchi:
1 pound (454 grams/16 ounces) fresh ricotta (2 cups)
2 large cold eggs, lightly beaten
1 tablespoon (1/2 ounce) unsalted butter
2 or 3 fresh sage leaves, or a few pinches of freshly grated nutmeg, or a few pinches of chopped lemon zest (all optional)
½ ounce Parmigiano-Reggiano, grated (about ¼ cup very lightly packed)
about ¼ teaspoon salt (a little more if using kosher salt)
all-purpose flour for forming the gnocchi

For the gnocchi sauce:
8 tablespoons (227 grams/1/4 pound/4 ounces) butter, sliced
2 teaspoons water

Step 1 (the day before you make the gnocchi):

Preparing the ricotta. If the ricotta is too wet, your gnocchi will not form properly. In her cookbook, Judy Rodgers recommends checking the ricotta’s wetness. To test the ricotta, take a teaspoon or so and place it on a paper towel. If you notice a very large ring of dampness forming around the ricotta after a minute or so, then the ricotta is too wet.

To remove some of the moisture, line a sieve with cheesecloth or paper towels and place the ricotta in the sieve. Cover it and let it drain for at least 8 hours and up to 24 hours in the refrigerator. Alternatively, you can wrap the ricotta carefully in cheesecloth (2 layers) and suspend it in your refrigerator for 8 to 24 hours with a bowl underneath to catch the water that’s released. Either way, it’s recommended that you do this step the day before you plan on making the gnocchi.

Step 2 (the day you plan on eating the gnocchi):

Making the gnocchi dough
. To make great gnocchi, the ricotta has to be fairly smooth. Place the drained ricotta in a large bowl and mash it as best as you can with a rubber spatula or a large spoon (it’s best to use a utensil with some flexibility here). As you mash the ricotta, if you noticed that you can still see curds, then press the ricotta through a strainer to smooth it out as much as possible. Add the lightly beaten eggs to the mashed ricotta.

Melt the tablespoon of butter. As it melts, add in the sage if you’re using it. If not, just melt the butter and add it to the ricotta mixture. Add in any flavouring that you’re using (i.e., nutmeg, lemon zest, etc.). If you’re not using any particular flavouring, that’s fine. Add the Parmigiano-Reggiano and the salt.

Beat all the ingredients together very well. You should end up with a soft and fluffy batter with no streaks (everything should be mixed in very well).

Step 3: Forming the gnocchi:

Fill a small pot with water and bring to a boil. When it boils, salt the water generously and keep it at a simmer. You will use this water to test the first gnocchi that you make to ensure that it holds together and that your gnocchi batter isn’t too damp.

In a large, shallow baking dish or on a sheet pan, make a bed of all-purpose flour that’s ½ an inch deep. With a spatula, scrape the ricotta mixture away from the sides of the bowl and form a large mass in the centre of your bowl. Using a tablespoon, scoop up about 2 to 3 teaspoons of batter and then holding the spoon at an angle, use your finger tip to gently push the ball of dough from the spoon into the bed of flour. At this point you can either shake the dish or pan gently to ensure that the flour covers the gnocchi or use your fingers to very gently dust the gnocchi with flour. Gently pick up the gnocchi and cradle it in your hand rolling it to form it in an oval as best as you can, at no point should you squeeze it. What you’re looking for is an oval lump of sorts that’s dusted in flour and plump.

Gently place your gnocchi in the simmering water. It will sink and then bob to the top. From the time that it bobs to the surface, you want to cook the gnocchi until it’s just firm. This could take 3 to 5 minutes. If your gnocchi begins to fall apart, this means that the ricotta cheese was probably still too wet. You can remedy this by beating a teaspoon of egg white into your gnocchi batter. If your gnocchi batter was fluffy but the sample comes out heavy, add a teaspoon of beaten egg to the batter and beat that in. Test a second gnocchi to ensure success. Form the rest of your gnocchi. You can put 4 to 6 gnocchi in the bed of flour at a time. But don’t overcrowd your bed of flour or you may damage your gnocchi as you coat them.

Have a sheet pan ready to rest the formed gnocchi on. Line the sheet pan with wax or parchment paper and dust it with flour. You can cook the gnocchi right away, however, Judy Rodgers recommends storing them in the refrigerator for an hour prior to cooking to allow them to firm up.

Step 4: Cooking the gnocchi:

Have a large skillet ready to go. Place the butter and water for the sauce in the skillet and set aside. In the largest pan or pot that you have (make sure it’s wide), bring at least 2 quarts of water to a boil (you can use as much as 3 quarts of water if your pot permits). You need a wide pot or pan so that your gnocchi won’t bump into each other and damage each other. Once the water is boiling, salt it generously.

Drop the gnocchi into the water one by one. Once they float to the top, cook them for 3 to 5 minutes (as in the case with the test gnocchi). When the gnocchi float to the top, you can start your sauce while you wait for them to finish cooking.

Place the skillet over medium heat and melt the butter. Swirl it gently a few times as it melts. As soon as it melts and is incorporated with the water, turn off the heat. Your gnocchi should be cooked by now. With a slotted spoon, remove the gnocchi from the boiling water and gently drop into the butter sauce. Carefully roll in the sauce until coated. Serve immediately.
