Smoky BBQ Pork Ribs


These smoky pork ribs were a seriously delicious dinner! I actually made these for Fathers' Day way back at the start of September and then with the move forgot to post them. Now there are probably thousands of rib recipes out there and I must have looked at dozens before deciding to just wing it and make something up myself. I didn't want anything too spicy and I didn't want to buy weird ingredients like liquid smoke.

While I'm all for making things from scratch I did use bought sauces for this, namely the Fountain Good Choice tomato and barbecue sauces which I reviewed earlier this year.

I wasn't able to find the American style ribs anywhere (admittedly I left it until the last minute!) so used these Aussie pork spare ribs instead and they worked just as well.

The cooking is done in three stages. First they are left to marinate in the fridge overnight which starts to tenderise the meat, then they are baked in the oven and lastly they are grilled and basted with marinade which makes them charred, sticky and luscious. So good!


I served the ribs with coleslaw, avocado, homemade potato wedges and corn on the cob. Hubby and kids all loved it and there lots of sticky smiles and licked fingers.

Remember to start this recipe a day ahead!

Smoky BBQ Pork Ribs

1/2 cup BBQ sauce
1/2 cup tomato sauce
1/2 cup apple cider vinegar
1/2 cup coconut sugar
4 cloves garlic
2 ts smoked paprika
2 ts mustard powder
salt and pepper to taste

1.5 kg pork spare ribs

Combine all marinade ingredients in a large dish and combine well. Add the pork and mix well, massaging the sauce into the meat. Cover the dish with 2 layers of plastic wrap and leave in the fridge overnight.

Preheat the oven to 150 degrees celsius, Line a large baking dish with foil and place a rack on top. Lay out the ribs on the rack, reserving the marinade, season with salt and pepper and cover with foil.

Bake for 1 1/2 hours, turning and basting with marinade every 20 minutes or so.

Meanwhile tip the remaining marinade into a small pot and bring to the boil for a few minutes, until it has reduced and thickened.

Increase the oven temperature to 200 degrees. Remove the cover from the ribs, brush with extra marinade and bake for another half an hour, turning and basting again halfway OR cook the ribs on a barbecue grill over a flame, turning and basting every 5 minutes or so (this will give best results!).

Remove from the heat and allow to rest for 15 minutes before serving.

Fluffy Father's Day Pancakes

Happy Father's Day to all the Dads!!! I hope you are all being spoilt this morning.

My hubby missed out on breakfast in bed this morning as we have to be up early and all pitch in to be ready for swimming at 8am. BUT I did make him a yummy breakfast. Apologies for the terrible photo, it was very dark and very early!

These were some of the lightest and fluffiest pancakes I've made, which you can't always say about pancakes made without wheat flour and buttermilk (I've made some real duds over the years believe me!).  Hubby and the kids LOVED them and they were the perfect start to Father's Day.

Fluffy Father's Day Pancakes

2 cups wholemeal spelt flour
1 tbs aluminium free baking powder
1 tbs coconut sugar
pinch salt
2 eggs
1 ts vanilla extract
270ml can Ayam coconut milk
1/2 -2/3 cup rice milk (or any  milk you like)
maple syrup and banana to serve
coconut oil for cooking

Place a large pan over medium heat.

In a large bowl place the flour, baking powder, coconut sugar and salt and whisk together. In a jug or small bowl, mix the eggs, vanilla, coconut milk and 1/2 cup of the milk together.

Pour the wet ingredients into the dry ingredients and mix until only just combined. The batter should be thick but if it is too thick and sticky add more milk, a little at a time until it is smooth and spoonable.

Drop some coconut oil into the pan and swirl to coat. Place spoonfuls of the mixture into the pan (I can fit 4 pancakes in my 10 inch pan). Cook until bubbles appear on the surface then turn and cook for another 2 minutes or so until golden brown and cooked through.

Place directly onto serving plates and top with sliced banana and a generous drizzle of maple syrup.

Strawberry Sorbet (Thermomix)

Does anything more perfectly say springtime than strawberry sorbet? Strawberries are abundant at the moment and so cheap that we are buying 4 or 5 punnets at a time with the intention of just freezing them. They are perfect to add to smoothies but my kids love just eating them straight from the freezer.

If you have a few extra punnets lying around then why not make sorbet?

This strawberry sorbet was our dessert on Father's Day a few weeks ago and it was so refreshing after our delicious BBQ dinner.

A lot of sorbet recipes include an egg white as this helps stop the sorbet from becoming icy like a granita. I am still a bit iffy about raw eggs (a leftover hang-up from pregnancy I think!) so I decided that adding a tablespoon of rice malt syrup might do the same job, preventing the sorbet from freezing rock hard. It worked pretty well!

This recipe is my own take on the sorbet recipe in the Everyday Cookbook which comes with the Thermomix. The possibilities for sorbet flavours are endless and I am already thinking of mango, pineapple and melon sorbet for summer.

Strawberry Sorbet

600g frozen strawberries
300g ice cubes
100g dextrose
juice and zest of 1 orange
1 tbs rice malt syrup

Put the dextrose into the Thermomix and mill for 10 seconds on speed 9.

Add strawberries, rice malt syrup and orange juice/zest into the bowl. Slowly turn the speed dial to speed 10 and blend for up to 30 seconds until everything is smooth.

Add the ice and blitz for 30 seconds, slowly increasing the speed to 10. Use the spatula to assist in incorporating the ice until it is completely smooth. Scrape down the sides as needed.

Freeze for about 20 minutes to get that perfect sorbet consistency. If freezing for longer you will need to let the sorbet rest on the bench for at least 10 minutes so it is scoopable.

Hazelnut-Chocolate Ganache Tart

It's a big call but this tart is one of the best things I've ever made. Or eaten. Seriously! I made this for dessert on Father's Day a week ago and it didn't even make it to dessert. We ended up having it for afternoon tea because it looked so good we couldn't wait!

My husband is a serious chocoholic so it was a given that I would make something chocolatey for Father's Day. But seeing three out of the five of us have issues with dairy, a traditional chocolate dessert just wasn't going to cut it.

The base is my own creation and I found a gorgeous-looking chocolate ganache spread on Quirky Cooking that I hoped would work as a tart filling. I doubled the recipe and added a good pinch of salt and it worked perfectly. I made the filling in the Thermomix but you could definitely make it the old-fashioned way by finely chopping the chocolate, heating up the remaining ingredients and then stirring together until smooth.

You will have about a cup of the base mixture left over and this is a good thing—roll it into bliss balls, sprinkle it over fruit and yoghurt or just eat it by the spoonful straight from the bowl. Delicious!

This chocolate tart is very rich—but not too sweet—and decadent without being sickly. It is the perfect special occasion dessert!

Dairy-Free Hazelnut Chocolate Ganache Tart

Base:

2 1/2 cups toasted hazelnuts
1 cup dates
1/3 cup coconut oil
1/4 cup raw cacao
1/4 ts sea salt

Place the hazelnuts in a food processor or high-powered blender and blitz to a fine crumb. Add remaining ingredients and process until well combined and sticky. Press most of the mixture over the base and sides of a lightly greased 23 cm tart pan with a removable base. (See note above on what to do with the leftovers.) Place in the freezer to chill until ready to fill and use.

Filling (Thermomix):
Very, very slightly adapted from Quirky Cooking

200g dark chocolate (Lindt 85% is good)
60g coconut oil
60g rice malt syrup (use honey or maple syrup to make it 100% grain free)
400g coconut cream
2 ts vanilla extract
generous pinch of sea salt

Break up the chocolate into pieces, place in the mixing bowl and grind for 10 seconds / speed 9. Scrape down the sides of the bowl.

Add remaining ingredients and cook for 2.5 minutes / 60 degrees / speed 2.

Remove the prepared tin from the freezer and pour in the chocolate filling. Smooth to the edges and place in the fridge until ready to serve with fresh berries.

Serves 10-12

Happy Father's Day!

It's Father's Day here in Australia so I wanted to give a shout out to all the Dads and Grandpas on this important day. And a special mention of course goes to my wonderful husband who at this moment is off at the chemist with Oscar and Charlie buying medicine for me. I've been sick for a week now and still feeling lousy. Despite that I made Eggs Benedict for him to have breakfast in bed this morning.

My version of Eggs Benedict includes a toasted English muffin topped with freshly sliced ham, spinach sauteed with garlic, a wedge of omelette (the only way my husband eats eggs), hollandaise sauce and a scattering of chives on top. Yum!

I also have a gorgeous chocolate and strawberry dessert planned for tonight which I will post about later in the week.

Happy Fathers' Day + No-Bake Chocolate Cheesecake

Happy Fathers' Day to all the dads out there!

This year Fathers' Day has fallen a mere 2 days after my and my husband's birthdays (yes we have the same birthday!). I wanted to make sure we celebrated both occasions properly without going overboard so I decided we would skip a birthday cake this year and just go with something extra yummy for dessert for Fathers' Day.

This has worked out perfectly as we went out for dinner at a lovely Italian restaurant for our birthday and between dinner and dessert we definitely didn't need cake as well!

I have been tossing up dessert ideas for weeks now but when it came to the crunch it had to be chocolate. My husband is a die-hard chocaholic and I'm known as the cheesecake queen around here, so really what else would I make? Ha!

This is an easy no-bake cheesecake which has a lovely creamy texture and a deep chocolate flavour. It is fructose free (as I am attempting to do whenever I bake these days) but you could easily substitute in regular sweet biscuits for the base and normal sugar for the filling, but maybe just cut it back a little.

I made this the day before and allowed it to chill overnight which I think gives the best results, although it would be set in as as little as 4 hours if you were pushed for time.

Served with fresh strawberries it was the perfect finish to our Fathers' Day lunch of Beef and Guinness Pie with mushy peas. Yum!

No-Bake Chocolate Cheesecake
Recipe by me

For the base:
150g plain sweet biscuits (mine were sugar-free from Aldi)
50g almond meal or LSA
50g dessicated coconut
1/4 cup raw cacao
110g melted butter

For the filling:
500g cream cheese, at room temperature
2 cups cream
1 cup dextrose (or regular white sugar if preferred)
2 ts vanilla extract
150g dark chocolate, melted
4 ts gelatine
1/4 cup hot water

Extra chocolate to decorate, optional

Line the base of an 8 inch spring-form pan with baking paper and set aside. Using a food processor, crush the biscuits into a fine crumb. Add the other dry ingredients and pulse to mix. Add the melted butter and blitz until well combined. Pour the crumbs into the prepared tin and smooth over the base and about halfway up the sides. Place in the fridge to set.

Sprinkle the gelatine over the hot water and allow to bloom (it will become thick and lumpy). Microwave on high for about 20 seconds until it is fully dissolved then set aside to cool.

Wipe out the food processor bowl then add the cream cheese and whiz until smooth. Add the dextrose and process for another minute or so until it is dissolved. Scrape the sides then add the cream, vanilla and melted chocolate and process for another minute. Finally add the cooled gelatine mixture and whiz for 2 minutes until thoroughly combined.

Pour over the prepared base then refrigerate until set, a few hours at least or overnight. Decorate the top with extra grated chocolate and serve with sliced strawberries. Serves 8-10.
