My favourite chocolate granola

With a big boy in grade 1 this year and another in kindy, I've realised just how important breakfast is to their mood and energy levels. I can pick the day they didn't eat properly by their behaviour at the end of the day! The more filling and protein packed their breakfast, the better the day goes (for everyone!).

My kindy boy Charlie loves a smoothie for breakfast most days and while the fruit and the flavour varies it always includes oats, chia seeds, coconut oil, something green and a big spoonful of NutraOrganics Thriving Protein (affiliate link).

Oscar on the other hand loves quinoa porridge or scrambled eggs most of the time but having a standby like some ready prepared granola is another great alternative for him.

I've posted some granola / toasted muesli recipes before but I just had to post this one because it is hands-down my favourite one yet! Sweet, nutty, chocolate-y and equally good for dessert as for breakfast. My husband has a sprinkle of this on his yoghurt at work most days. It is a great alternative to porridge and about a million times more nutritious and filling than any cereal out of a box.

As with all recipes like this you are limited only by your imagination. If you don't like something or just don't have any feel free to substitute for something else.

The bowl above was my dinner - a generous 1/2 cup of granola with homemade almond and coconut milk and a scattering of frozen raspberries. 

If you've never tried buckwheat before you should definitely give it a go! It's crunchy, nuttiness goes perfectly here. If you use honey or maple syrup instead of the rice malt syrup it will also be 100% grain free. The 1/2 cup of sweetener is a little on the high side for us but could be increased or cut back depending on your taste.

My Favourite Chocolate Granola
Recipe by me
Makes lots!

3 cups raw mixed nuts (I used ABC nuts - almonds, brazils and cashews)
3 cups coconut flakes
1/2 cup linseeds
1/2 cup raw buckwheat
1/4 cup chia seeds
1/4 cup sesame seeds
1/4 cup raw cacao
1/2 cup coconut oil
1/2 cup rice malt syrup (or honey or maple syrup)
2 ts cinnamon
1/2 ts Himalayan salt

Preheat oven to 140 degrees C. Line a large baking tray with foil and set aside.

Roughly chop the nuts by hand or in a food processor. Place the nuts in a very large bowl and add all remaining ingredients. Mix until well combined.

Bake for approximately 1 hour, checking and stirring every 15 minutes, or until the granola is as dark and crunchy as you prefer. Make sure you keep a close eye on it!

Allow to cool completely before storing in an airtight container for a few weeks to a month.

Sweet and Salty Potato Chip Cookies


I am a sucker for the combination of sweet and salty, be it popcorn, pastry or salted caramel. When I saw these pop up on Laws of the Kitchen and I happened to have half a bag of potato chips sitting in the pantry their fate was sealed!

The little green pieces in my cookies are actually pumpkin seeds. I didn't have enough of any one type of nuts to make up the 1/2 cup needed for the recipe but I did have a bag of Lucky Smart Snax Recovery which has oven roasted peanuts, almonds, cashews and pepitas. It was perfect for these cookies and using a mixture of nuts made them especially tasty.

My cookies were no where near as chunky looking as the original so I think I overprocessed the nuts and chips but they were still packed with crunchy bits and were deliciously sweet and salty. They were a real hit with the kids and they disappeared in record time. Sorry for the blurry photo, I think someone's little sticky fingers have been playing with my camera!

Sweet and Salt Potato Chip Cookies
Adapted from The Caker via Laws of the Kitchen

225g butter
1 cup dextrose (or 100g sugar)
1/2 cup nuts, finely chopped
250g plain flour
1/2 cup crushed salty potato chips
1 ts vanilla extract

Preheat oven to 180 degrees celsius. Line 2 baking trays with baking paper and set aside.

In a stand mixer cream together the butter and sugar until smooth and pale. Add the vanilla and beat to combine. Fold in the flour and when mostly combined add the nuts and potato chips and stir until well mixed through.

Roll the dough into balls and place on the prepared trays. Flatten with the bottom of a glass or your palm.

Bake for approximately 15 minutes or until just golden brown around the edges. Remove from the oven and allow to cool on the tray for 5 minutes before turning out onto a wire rack to cool completely.

Makes 24.

Lucky Smart Snax Review and Giveaway!

It's been a really interesting experience going back to study after 13 years. First time around was straight after high school when I lived on campus and did all the usual sorts of things uni students do! I did well academically but I could have (and should have) done a lot more work.

I remember long nights cramming for exams fuelled by lots of caffeine and sugary snacks. There was a 24 hour convenience store a short walk from my building and I used to go for midnight walks with friends to stock up on Sara Lee Ultra Choc ice cream!

This time around I am in my 30s and the mum of 3 young children. Needless to say it's been an entirely different experience! These days I study whenever I get a spare moment - waking up at 5am to get an hour of reading time before anyone else is up. Working feverishly during my baby's nap time to get as much done as possible before he wakes up. 10pm is about as late as I can stay up at night both in terms of being able to concentrate and to ensure I get enough sleep and not feel like a zombie the next day.

My study snacks have also changed. Definitely no more chocolate ice cream for me seeing as I avoid both sugar and dairy these days!

My go-to snack for the past year or so has been nuts. I've been buying them in bulk from a local organic food store and making up snack mixes, bliss balls, biscuits and toasted muesli with them. They are filling, packed with nutrients and good fats and best of all they keep me going when I don't always have time to eat a proper meal.

I have to say they have also been a lifesaver at exam time when I didn't really feel like eating (too many butterflies in my tummy) but needed something light and nutritious to get me through a 2 hour science exam.

Chocolate Olive Oil Cake (Secret Recipe Club)

Secret Recipe Club time!

This month I was assigned The More than Occasional Baker by Ros and let me say it was an absolute pleasure spending some time on her blog. Baking has always been my first love but I'm not doing much of it these days because of time and dietary restrictions. I must have looked at/drooled over nearly every recipe on her blog and found so many things I would have loved to make (and eat). The Peanut Butter Toblerone Cheesecake and Neapolitan Rose Cake really caught my eye!

In the end I settled on this Chocolate Olive Oil Cake, not only because I had all the ingredients but because it sounded insanely good. It didn't disappoint! This is a Nigella Lawson recipe after all and they are always pretty reliable and delicious.

I made a few minor substitutions, replacing some of the regular olive oil with extra virgin, using dextrose instead of sugar and blitzing up some raw ABC nuts (almond, brazil and cashew) instead of the almond meal because that's what I happened to have. The resulting ground nuts weren't quite as fine as what you can buy but I think that added to the charm of this cake.

In case you can't tell, we LOVED this cake. Special enough for a dinner party but easily enough to make any time, this recipe is a winner. Thanks Ros!

Chocolate Olive Oil Cake
Recipe adapted from Nigella Lawson via The More Than Occasional Baker

75 ml regular olive oil (plus more for greasing)
75 ml extra virgin olive oil
50 g good-quality cocoa powder
140 ml boiling water
2 teaspoons best vanilla extract
150 g ground almonds (or 125 g plain flour)
½ teaspoon bicarbonate of soda
1 pinch of salt
144 g dextrose
3 large eggs

Preheat the oven to 160°C, fan-forced. Grease a 9-inch springform pan with a little oil and line the base and sides with baking paper.

Place the cocoa powder into a small bowl or jug and whisk in the boiling water and vanilla extract until you have a smooth but still runny paste. Set aside to cool a little. In another small bowl, stir together the ground almonds (or flour) with the bicarbonate of soda and pinch of salt.

Place the dextrose, olive oils and eggs into a large bowl and beat with an electric mixer at high speed for about 3 minutes or until the mixture is pale, thick and aerated.

Pour in the cocoa mixture, beating until well incorporated then fold through the ground almond (or flour) mixture with a spatula until only just combined. The batter will be very liquid.

Pour into the prepared tin and bake for 40-45 minutes (mine took 50 minutes and was still very wobbly but a skewer came out clean). The sides should be set and a cake tester should come out almost clean.

Allow to cool in the tin on a wire rack for 10 minutes before carefully removing the tin. Can be eaten warm or cool, either way it will blow your mind! It is pretty rich though so this would easily serve 12, especially if served warm with ice cream. I served it to my boys with a dollop of sweet and creamy greek yoghurt as pictured.

NB. The cake appeared very light, spongy and wobbly at the 50 minute mark but I trusted the skewer coming out clean to tell me it was cooked. It collapsed considerably upon cooling but that is typical of cakes like this and it was incredibly moist and perfectly cooked. So keep an eye on it and don't over-bake!

No Bake Lactation Cookies (Bliss Ball Slice)

As any new parent will tell you, the first few months with a baby revolve around feeds, sleeps and nappy changes. While I have happily breastfed all 3 of my boys it has not always been easy. In fact at some points it has been excruciatingly painful and downright stressful.

With each baby though I have learnt new strategies and this time around one thing I committed to doing was increasing/maintaining my supply through my diet.

I found some really good recipes for lactation cookies online and made a couple of batches a few weeks before my due date to stash in the freezer. I snacked on a few in the days before Noah was born and took a bagful to the hospital with me as well.

I found the midwives to be really interested and supportive of the choices we made during labour (things like having a doula and choosing drug-free methods of pain relief) and they were keen to find out about what I was doing in the days after Noah was born as well. I snacked on my lactation cookies immediately after labour and at all hours of the day and night in those first few sleepless days and I can say with certainty that my milk came in almost a full day earlier than was expected or had experienced before. Was it the cookies? Who knows, but they certainly didn't do any harm!

My research showed that the key active ingredients in lactation cookies are oats, flaxseed and brewers yeast so every batch I made was based around those.

Some of the sites I found suggested that you could see better results if you just ate the dough rather than bake them. Even after pregnancy I am a little leery of raw eggs (even though that isn't too much of an issue here in Australia) so I always baked mine. That is until I came up with the idea to combine the active ingredients of a lactation cookie with the energy packed ingredients of a bliss ball!

I found it really easy to make up a big batch of my lactation bliss balls and store them in the freezer to grab as an easy snack during the day or a pick-me-up during Noah's nighttime feeds. Those bliss balls really got me through those first few exhausting months!

Lately I can't be bothered to roll the mixture into balls so I simply line a large baking dish with paper and press the mixture in well. Once it has chilled in the fridge I slice it into squares and throw in the freezer. Easy. Both my big boys love them as well so they sometimes get some of 'mummy's special slice' as a treat too.

No Bake Lactation Cookies (Bliss Ball Slice)
Recipe by me

2 cups traditional rolled oats
2 cups raw ABC nuts (almond, brazil and cashew nuts)
1 cup dessicated coconut
1/2 cup ground flaxseed
1/2 cup raw cacao
2 tbs brewers yeast
2 tbs coconut oil
1 tbs cinnamon
1/2 ts sea salt
1/2 cup rice malt syrup
1-2 tbs rice milk

Line a lamington tray with baking paper and set aside.

Place the oats and nuts into a food processor and blitz to a fine crumb. Add in remaining dry ingredients and process until well combined. Add the rice malt syrup and coconut oil and process until the mixture becomes sticky and starts to clump together. Only add the milk if needed, a little at a time.

(Make sure you taste the mixture at this stage. Brewers yeast has quite a strong flavour so you can add more syrup or other spices (ginger works well) or even some dried fruit. I find the cinnamon and rice malt syrup to be sweet enough for me and the salt creates a yummy and really balanced taste.)

Tip the mixture into the prepared tin and press down well before placing in the fridge to chill for 1 hour.

Remove from the fridge and tip the slice out onto a large cutting board. Using a large sharp knife slice into small squares (I get at least 40 from this amount). Place in an airtight container and store in the freezer.

I found snacking on a few of these every afternoon really helped to boost my supply for Noah's evening feeds, which was always when he was hungriest and wanted to cluster-feed. They also make a great breakfast on the run which is perfect if you have older children and can't sit down to eat properly in the mornings.

Breakfast Bars

Lately it's been really hard to fill up my kids. At 3 and almost 5 these boys eat a LOT.  Even my 5 month old who has just started on solids has already eaten kilos of fruit and vegetable purees. Heaven help us when they're teenagers!!!

I spend a lot of time looking for new recipes for snacks and quick meals that will fill them up for longer. My main criteria are high protein, low/no sugar and wholegrain. I've been reading Bianca's Wholefood Simply blog for ages but last week I splurged and bought her gorgeous cookbook of the same name. It is a treasure trove of favourites from the blog and so beautifully photographed and put together. The boys spent a good half an hour last night before bed flicking through and deciding what they would like me to make.

For me these breakfast bars were an immediate winner in terms of both ingredients and being so easy to make. My boys loved them for afternoon tea with a glass of milk and it keeps them going until dinner.

Breakfast Bars
Very slightly adapted from Wholefood Simply

1 cup raw macadamias
1 cup dessicated coconut
2 ripe bananas, mashed
2 ts vanilla extract
pinch salt

Preheat oven to 180 degrees celsius. Line a loaf pan with baking paper and set aside.

If you have a high speed blender or food processor simply throw in all the ingredients and blitz until smooth. If you think your blender would struggle (like mine did), use it to process the nuts then simply mix with the remaining ingredients in a bowl.

Tip the mix into the prepared pan, smooth the top and bake for approx 25 minutes or until it is golden around the edges and skewer comes out clean.

Allow to cool on a wire rack then slice into bars and enjoy!

Pistachio Crumbed Chicken with Raspberry Soy Sauce (Secret Recipe Club)



Happy new year everyone and welcome to my first Secret Recipe Club post of 2014!

So my blogging has been a little sporadic to say the least over the past couple of months. Who would have thought that 3 little boys would keep me so busy! My littlest boy is now 3 months old and sleeping pretty well so I am finally starting to feel more like myself and more motivated to get back into the kitchen.

This month for SRC I was assigned My Judy the Foodie by Shari. I love the idea behind this blog, with Shari cooking her way through her mother Judy's recipes as a way of remembering her and preserving her culinary prowess.

I can really relate to Shari as I lost my mum to cancer in 2008 and actually started this blog within a few weeks of her passing. While she didn't love cooking she certainly encouraged me and loved eating anything I made. I know she would have loved me blogging.

While Shari has some delicious sounding sweets on her blog I am on a healthy-eating kick at the moment to shift some baby weight so decided to stick with a main meal. The one I chose, Pistachio Crusted Chicken with Raspberry Soy Sauce, had me so intrigued I just had to make it!

I sent my husband out to buy the ingredients for this one and we both had mini heart attacks at the price of pistachios - about $60/kg!!! So we got just 1 cup of un-shelled pistachios and made up the rest of the quantity with mixed nuts. The end result was still really tasty with that gorgeous pistachio green colour. I would however recommend blitzing the nuts in a food processor for a smoother crumb. I crushed mine very carefully with a rolling pin so as not to wake the baby!

I was a little dubious about the sauce, I mean who mixes raspberry jam with soy sauce and horseradish? I will admit to having a little taste of the sauce on its own and wondering whether I'd made a huge mistake. But Judy was onto something because when it was poured over the chicken it was delicious! I served it with sweet potato mash and it made a really lovely dinner.

Recipe Pistachio Crusted Chicken with Raspberry Sauce
Adapted from My Judy the Foodie

500g chicken thigh fillets
garlic powder
olive oil for frying
sea salt
3 eggs, beaten
1 cup flour
1.5 cups crushed pistachio nuts
250g jar of raspberry jam (mine was St Dalfour 100% fruit)
90mls low salt soy sauce
2 ts of white horseradish from a jar

Preheat oven to 180 degrees Celsius.

Season the chicken with garlic powder and sea salt. Dip the chicken fillets into a bowl filled with flour, then into a bowl full of beaten eggs. After chicken is fully coated with egg wash, place in a bowl with the crushed pistachio nuts and cover completely.

In a large fry pan over medium high heat, fry the chicken pieces in about ¼ cup olive oil until both sides are golden, approximately 2-3 minutes per side.

Remove the pieces from the pan and place on a baking tray and bake for approximately 20 minutes or until cooked through.

To make the sauce, combine the raspberry jam, soy sauce and horseradish in a small bowl and mix completely to desired taste. Heat the sauce if you wish and pour over top baked chicken.

Christmas Rice Salad

I know I said I wasn't going to post any of my Christmas recipes but I made an exception for this salad. Because it is exceptional!

The original version was supposed to be made with quinoa rather than rice. We had the quinoa cooked on Christmas day but with all the other food we had, we totally forgot about it sitting there in the pot and ended up having to throw it away.

So a couple of days after Christmas I decided to make it with rice and use up all the yummy herbs etc that I had bought specially for it. While the nuts and cranberries do make it very festive and therefore perfect for Christmas, I guarantee it will be welcome at any BBQ anytime!

Christmas Rice Salad
Recipe by me

4 cups cooked brown rice
1 red capsicum, diced
1 green capsicum, diced
3 shallots/spring onions, finely sliced
100g cashews, roughly chopped
100g dried cranberries, roughly chopped
1 bunch mint, chopped finely
1 bunch parsley, chopped finely
zest and juice of 1 lemon
1 clove garlic, crushed
1/2 cup olive oil
2 tbs soy sauce

Combine all ingredients in a large bowl and mix well. Serve warm or cold. Especially good served with leftover ham or roast turkey. Serves 8-10 as a side dish.

Christmas Baking with Lucky Nuts

Recently I received a lovely gift bag of nuts from Lucky courtesy of Product Talk by Nuffnang. Just look at that haul! As a baker it made me very, very happy especially in the lead-up to Christmas which is the time of year when I cook with nuts.

I grew up watching my mum use Lucky nuts in her Christmas baking and they are what I turn to for special occasion baking too. I didn't actually realise it but Lucky almonds are all grown in Australia and in fact Lucky is the leading cooking nut brand in Australia, so they are definitely doing something right!

In case you can't see well enough I received a bag each of blanched, slivered and flaked almonds, walnuts, pine nuts, almond and hazelnut meals and 2 new products which I was very excited about.

Firstly was a bag of Easy Chef Oven Roasted Almond Meal, which as the packet says it basically a cheesecake base in a bag. So of course I had to make a cheesecake!

Secondly was a bag of Easy Chef Almond Crumble which is a mix of almond meal, flaked and slivered almonds with oats and again as the packet says, is a crumble topping in a bag. Perfect.

The walnuts didn't make it into my baking but I enjoyed them as a tasty mid-morning snack during the week. The pine nuts are set aside for pesto and the almond meal will be used in a gluten free almond shortbread recipe I am working on for Christmas. The blanched almonds will of course be decorating the tops of my Christmas cakes which aren't ready to bake yet.

I ended up making 4 desserts, perfect for Christmas for anytime really - some moist Choc Hazelnut Cakes, a Panforte Ice Cream, Almond Cheesecake and Blueberry Crumble Pie.I'm trying to cut back on sugar so some of my recipes use Natvia.

I hope you enjoy these recipes and if you would like to try any Lucky products for yourself, the full range is available in Coles with a smaller range available in Woolies and independent grocery stores.

Almond Cheesecake




Adapted from Lucky

For the crust
125g unsalted butter, melted
250g packet Lucky Oven Roasted Almond Meal
1 tbs Natvia for Baking (or 2tbs brown sugar)

For the filling
500g cream cheese
3 eggs
3/4 cup Natvia for Baking (or 3/4 cup caster sugar)
2 ts vanilla extract
1/2 cup pure cream
1/2 cup Lucky Flaked Almonds, toasted*

Lightly grease and line the base of a 23cm springform pan.

Mix together the Lucky Oven Roasted Almond Meal with the melted butter and Natvia. Spoon into the prepared tin and press over the base and up the sides. Place in the freezer to chill for 30 minutes.

Preheat oven to 180 degrees celsius (160 degrees fan-forced).

In a food processor or electric mixer, beat together the cream cheese and Natvia until smooth. Add the eggs, vanilla and cream and beat for 3 minutes. Pour the mixture into the prepared base and bake for 35-40 minutes or until cheesecake is lightly golden and just set in the middle.

Remove and allow to cool to room temperature before chilling in the fridge for at least 2 hours. Decorate with toasted almonds. Serves 8-10.

Panforte Ice Cream

1 cup full cream milk
1/3 cup Natvia for Baking (or white sugar)
1/2 ts cinnamon
1/4 ts ground cloves
1/4 ts ground nutmeg
Zest of 1 orange
2 cups pure cream
4 large egg yolks
1 x 110g pack Lucky Slivered Almonds, toasted*

Warm the milk, Natvia/sugar, spices and orange zest in a medium saucepan. Remove the pan from the heat, cover and leave to steep for 30 minutes. Add the cream and rewarm the mixture.

In another large bowl whisk the egg yolks.

Pour the warm milk/cream over the yolks, whisking constantly, then pour the mixture back into the saucepan. Cook the custard over medium heat, stirring with a heatproof spatula, until it thickens and coats the spatula. Pour the custard through the strainer into the cream. Mix thoroughly.

Place the bowl into an ice bath and stir the custard until it is cool.

Chill the mixture thoroughly in the fridge before churning in an ice cream maker according to the manufacturer's instructions. Add the toasted almonds in the last few minutes of churning.

* To toast almonds place them on a large ungreased oven tray and bake at 170 degrees celsius for 10-12 minutes, stirring several times. Leave to cool    

Makes approx 1 litre.


Moist Choc Hazelnut Cakes

90g Lucky hazelnut meal
125g dark chocolate (minimum 70% cocoa)
125g butter
pinch of salt
2 whole eggs
2 egg yolks
65g caster sugar
Plain flour for dusting (can use gluten free flour)
Butter for greasing
Raspberries for serve

Place a baking tray in the oven and preheat to 180 degrees celsius fan forced. Grease the inside of 6 metal dariole molds with butter and dust with flour. Set aside.

Melt the chocolate in a small bowl over a pan of simmering water, making sure the water does not touch the bottom of the bowl. Stir in the butter and remove from the heat.

Place the whole eggs, egg yolks and sugar in a large bowl and beat with an electric mixer for 5-7 minutes or until light, pale and foamy. Fold the melted chocolate into the eggs and then the hazelnut meal, mixing gently until well combined.

Spoon evenly into the prepared molds, place on the baking tray and bake for 8 minutes. Remove from oven and allow to rest for 1-2 minutes, before turning out onto serving plates. Dust each one with icing sugar and serve with fresh raspberries. Makes 6.


Blueberry Crumble Pie

Adapted from Dorie Greenspan's Double Crusted Blueberry Pie in Baking from My Home to Yours, p361

Crust
1 1/2 cups all purpose flour
1 tbs sugar
280g salted butter, very cold and cut into tablespoon size pieces
68g coconut oil, cold
About 1/2 cup ice water

Put the flour and sugar in a food processor and pulse just to combine the ingredients. Add the butter and coconut oil and pulse only until the butter and coconut oil are cut into the flour. Gradually add the water, a few tablespoons at a time, until the dough is moist and clumpy. You want to see some pieces of butter. Check to see if the dough will stick together if pinched, and keep pulsing until it does.

Tip the dough out onto a piece of cling wrap, bring it together into a disc and refrigerate for at least 1 hour before rolling out.

Roll out the dough on a floured work surface or in between 2 pieces of baking paper. Lay the dough out into a greased 9 inch pie pan and trim the edges. Place in the fridge for 30 minutes. Preheat the oven to 180 degrees celsius. Blind bake the pastry shell for 20 minutes, then remove the lining and bake for a further 5 minutes.

Filling
1 x 500g pack frozen blueberries
2 tbs sugar
Juice and zest of 1 lemon
1 tbs cornflour mixed with 2 tbs water

Place the blueberries, sugar and lemon zest and juice in a saucepan and cook over medium heat until the blueberries have thawed. Add the cornflour and water and cook for a further few minutes until the liquid has thickened and is clear and syrupy. Remove from the heat and cool for 10 minutes.

Crumble
1 pack Lucky Almond Crumble
80g unsalted butter
2 tbs raw sugar
1/2 ts ground cinnamon

In a medium bowl mix together the Almond Crumble, sugar and cinnamon. Rub in the butter using your fingertips until well combined..

To assemble
Spoon the filling into the prepared pie shell. Sprinkle over the crumble topping evenly over the filling leaving a small gap around the edges to show the gorgeous colour of the blueberries.

Bake in a preheated 180 degree oven (160 degrees fan forced) for approx 20 minutes until the topping is golden brown and the filling is bubbling.

Remove from the oven and allow to cool for 10 minutes before serving with a big dollop of cream.

This recipe makes 1 large 9 inch pie or 4 smaller pies.

TWD BWJ - Biscotti

I think every baker has something they fear, whether it be caramel, pastry or decorating cakes. For me in the past it has been biscotti. Sounds crazy for something so simple but I have never been able to get it right! So in an attempt to overcome this silly fear I made this week's pick twice (which I never do).

I have a huge bag of raw almonds in the fridge so that's what I went with rather than buying hazelnuts. 

Batch one I made with almonds, vanilla and cinnamon and replaced the booze with milk. The dough mixed up well, looked great when it was baked but then pretty much fell apart when I sliced it. So I ended up with chunky crumbly-edged tooth-breakers. Really tasty dunked in tea but not much good for anything else!

Batch two I made with almonds, cocoa and brandy. I chopped the nuts up more finely and when it came time to slice I used my best serrated knife and took it really slowly.

Success!  These were pretty much the perfect biscotti. I got the size right, they sliced cleanly and were lovely and toasty. And of course delicious! I would happy giving these as gifts come Christmas time which is a pretty big tick of approval!

Super Toasted Muesli


I have a love-hate relationship with breakfast. If I have toast/pancakes/waffles etc by mid-morning I feel light-headed and stuffed from a carb overload. I know I need protein but I don't have time for a cooked breakfast and I am trying to stay away from just cereal and milk which I am heartily sick of. What to do?

Lately my breakfast of choice is a freshly made fruit and veggie juice, using some combination of apple, carrot, celery, beetroot, ginger, lemon, pineapple and spinach. Absolutely delicious and packed full of nutrients. Then an hour or so later I will have either porridge with LSA or toasted muesli with yoghurt.

I found this muesli recipe on Scandi Foodie and it ticks all the boxes for me in terms of what I want to be eating at the moment. I made a few changes based on what I had in the pantry and also made a double batch so I don't have to make it so often.

Super Toasted Muesli
Recipe slightly adapted from Scandi Foodie

200g rolled oats
200g rolled quinoa
1/2 cup dessicated coconut
100g raw buckwheat
200g seed and nut mix (mine had pepitas, sunflowers, sesame and pine nuts)
200g raw almonds
2 tbs cinnamon
100ml rice bran oil
2 tbs rice syrup
Yoghurt and dried fruit of your choice to serve

Preheat oven to 180 degrees celsius (160 degrees fan-forced). Combine dry ingredients in a large bowl. Add the oil and rice syrup and mix until well combined. Pour into a large baking dish and bake for 30-40 minutes, stirring every 10 minutes, or until the muesli is well toasted and golden brown. Remove and allow to cool on a wire rack before storing in an air-tight container. Serve with yoghurt and whatever dried fruit you like. I use sultanas and dried apricots. Yum!

TWD BWJ - Pecan Sticky Buns


You can probably tell from the photo that my sticky buns aren't quite as 'sticky' as they should be. That's because I could feel my arteries clogging just reading this week's recipes and decided to cut the butter somewhat.

I made the brioche but didn't laminate it and I used just a tablespoon of butter in the topping for each tray of buns. The results were absolutely delicious so I can only imagine how amazing the original version would have been!

I've never made brioche before and was really pleased with how it turned out. I'm already planning on making more and turning it into french toast one weekend. Yum!

Overall these were wonderful. I don't regret cutting the butter out because now I don't feel so guilty sneaking one for afternoon tea :)

TWD BWJ - Rugelach

This week we have Rugelach! Before making them for TWD a few years ago I had never heard of Rugelach and had no idea how to pronounce it let alone how they were supposed to look or taste. I felt a bit more prepared this time around and had fun with the recipe.

I made just a 1/3 batch (using only 1 stick of butter instead of 3!!!) and used prunes, dark chocolate and walnuts for the filling. Yum!

It seemed like the humidity would be a problem for this pastry so I made it in the food processor using cold butter and cream cheese then chilled it overnight before rolling. It worked like a charm and made some seriously good pastry!

Even with a 1/3 batch I still got 24 little cookies (pastries?). They were amazing straight out of the oven and still good the next day although they had lost their crispy edges.

There's still about a cup of prune levkar left and my boys are loving it spread on their toast or stirred through porridge for breakfast.

TWD Catchup

Hello? Is anyone still out there?? I'm embarrassed to say it's been over 6 weeks since I last blogged. That's not to say I haven't been baking along at home but life has well and truly gotten in the way of blogging recently. So it's time for another catchup post and another promise to do better this month!

For the 15th of March Lauryn of Bella Baker chose Citrus Currant Sunshine Muffins. Love citrus, love currants, love muffins and love Lauryn! These were really tasty and I have a little stash of them in the freezer.


For the 22nd of March
Suzy of Suzy Homemaker chose Honey Nut Brownies. I really wasn't sure about these. I like honey on crumpets and in stir fries but that's about it. Still, my MIL gave me a bottle of roasted hazelnut honey which was perfect for this recipe. These had the texture of a chewy gingerbread rather than a brownie but they were pretty tasty and even better on the second day.



On the 5th of April Jessica of Domestic Deep Thought of the Day chose Coffee Ice Cream Tart. Sold! We weren't huge fans of the crust which set rock solid in the freezer but it tasted great. Next time I would just use a crumb crust and go crazy with different filling combinations. Yum!


For the 12th of April Sarah of Teapots and Cakestands chose Strawberry Rhubarb Double Crisp. I've never actually tried rhubarb and strawberries together before but have been intrigued after seeing it around. The verdict? Delicious! I should have just made a half batch but we ate it for breakfast and dessert over about 3 days and loved it. Definitely a keeper!

So that's it! At this stage I intend to post my Tourtely Apple Tart on Tuesday (gasp!) but as I haven't made it yet we'll just have to wait and see.

Tuesdays with Dorie: Nutty, Chocolatey, Swirly Sour Cream Bundt Cake

This week Jennifer of Cooking for Comfort chose a recipe with possibly the longest name I've ever come across! The Nutty, Chocolatey, Swirly Sour Cream Bundt Cake. To tell the truth I was debating whether to make this or not. My thighs really don't need a chocolatey, sour cream anything at the moment. But I know N's lab mates are always up for cake so I figured I could just give it away. Unfortunately the universe/my oven didn't cooperate.

Despite the oven always cooking hotter and faster than I expect, this time... it didn't. My beautiful bundt cake with the crispy golden crust was massively underbaked. As it was cut each slice collapsed in on itself leaving a gooey, doughy centre. As you expect this made for a very sorry looking photo. See above.

But still, it was delicious! Chocolate, orange zest, cinnamon, walnuts ... it was a marriage made in heaven. It even came out the pan perfectly, something I know others were struggling with. (I used a silicone pan greased with olive oil spray in case you were wondering).

We ended up just picking at the cooked parts and throwing the rest away. Such a shame. But I'm really not sure what I could have done differently. It baked for the full 65 minutes, the top was crisp and golden, it was pulling away from the sides and a skewer came out clean. Oh well.

Tuesdays with Dorie: Cranberry Upside-Downer

Cranberries aren't all that common in Australia but I was delighted when Sabrina of Superfluous chose Dorie's Cranberry Upside-Downer this week.

While we never see fresh cranberries here and the frozen ones make only a brief appearance in December, I knew I had one lonely box left in the freezer. Yay!

There was no way I wasn't going to love this cake. First of all, upside down cakes are fun! I've been making a version with tinned pineapple since I was a child. Secondly it has fruit, nuts and spices. All of which I adore.

The cake is a breeze to make and it looks stunning covered with bright, jewel-toned cranberries and its shiny redcurrant glaze.

Served warm straight from the oven with a scoop of vanilla icecream, this is my idea of heaven.

Tuesdays with Dorie: Gingered Carrot Cookies


After all the brownies and blondies we've had, finally a cookie for us redheads! Dorie says she created these cookies by accident but I say making carrot cake in cookie form is pure genius :)

While carrot cake can be a stodgy, oily disaster, these were fantastic! Plus they were a breeze to make and we had everything in the pantry already which I love. I used 1/2 teaspoon of mixed spice (cinnamon, nutmeg and allspice) in addition to the ginger which gave them a lovely warmth and perfectly complemented the nuts and raisins.

I only made half a batch and got 16 decent sized cookies. I also whipped up a quick cream cheese icing for some while the rest of the batch ended up in the freezer.

The taste test ...

Umm, it's carrot cake in cookie form so of course they were tasty! They're not special occasion cookies but for everyday I would definitely make them again. That's really all you need to know.

Tuesdays with Dorie: Chewy, Chunky Blondies

This week's TWD recipe was Nicole of Cookies on Friday and she picked Dorie's Chewy, Chunky Blondies. I don't think I've ever made or eaten a blondie so I wasn't really sure what to expect. Turns out these are supposed to be like cookies but in bar form.

We can't get butterscotch chips here but to keep the caramelly theme going I used dark brown sugar and some chopped up Violet Crumbles (chocolate covered honeycomb pieces) as well as extra chopped dark chocolate and some walnuts.

I made a half batch in an 8 x 8 pan and baked for 35 minutes. At that point they were puffed and a deep golden brown but after a few minutes on the bench the middle fell completely. So my blondies were a little on the flat and greasy side. But the taste?

The taste test ...

AMAZING. Especially warm from the oven when they're gooey and melty and oh so delicious. You'll see in the photo above there are 2 pieces missing, well a few more went missing immediately after. I wish we had some left!

Spiced Sugared Nuts

With all the Christmassey fare I've made over the years, I can't believe I've never made nuts. Until now, that is! I saw the recipe for these spiced sugared nuts in the December/January edition of Super Food Ideas magazine and knew they would be perfect as a gift.

They have a crisp, crackly coating of sugar and spices and the chilli adds just enough heat to cut through the sweetness. These nuts are definitely moreish!

Spiced Sugared Nuts

3/4 cup icing sugar
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon chilli powder
1/2 teaspoon salt
400g assorted, unsalted mixed nuts
1 eggwhite, lightly whisked

Preheat oven to 180 degrees C (350F). Combine the dry ingredients in a bowl. Place the nuts and eggwhite in a large bowl. Stir to combine. Add the spice mixture to the nut mixture and mix well.

Line a large baking tray with baking paper. Spread over the nut mixture in a single layer and bake for 10 minutes or until golden. Remove from oven and cool completely on the tray. Break up any large clusters. Serve immediately or wrap in a cellophane bag tied with ribbon for a lovely Christmas gift.

Makes 4 cups.

Tuesdays with Dorie: My Favourite Pecan Pie

I have to admit I wasn't that excited about making pecan pie this week. I've been in Christmas baking mode for weeks now and have been snacking on lots of goodies. Pecan pie is SO sweet that just the thought of it made me want to eat a truckload of veges.

BUT this pecan pie is a little bit different. First of all there is way less sugar/corn syrup than in some versions plus it has a few extras like chocolate and coffee powder. To boost the chocolate factor I decided to do a chocolate crust as well (using Dorie's Chocolate Shortbread Tart Dough from p 476 of Baking).

The taste test ...

Oooh boy, this is one hell of a pecan pie! While it's definitely rich it's not too sweet, with the coffee and chocolate notes providing the perfect balance. The chocolate crust was fantastic! It got a little browner than I planned (but not at all burnt even though it appears that way in the top photo). We served it with a big scoop of Cappucino Indulgence icecream. Yummmmmm.

Coming after one of the best Sunday dinners I think I've ever made (chargrilled Angus beef with avocado bearnaise sauce and mashed potato), it was a wonderful end to a great weekend!
